Nut Pastry Pinwheels

Preheat oven to 350 degrees F
- For the syrup:
- 1/2 cup clarified butter, plus extra for brushing
- 3 cups walnuts, coarsely ground
- 2 tsp. ground cinnamon
- 1 tsp. ground cloves
- 9 oz. ready-made phyllo dough
- 1 1/2 cups superfine sugar
- 1 tbsp. freshly squeezed lemon juice
- 4 tbsp. corn syrup
Roast Goose

- Stuffing:
- 5 lb. goose
- Salt and pepper
- Chicken broth
- 2 onions, sliced
- 1 orange, peeled, and broken up

- Pinch of ground cardamom
- 1 cup plain unsweetened almond milk

Malted Vanilla Milk Shake

- 3/4 cup chilled whole milk
- 1 vanilla bean, split lengthwise
- 2 1/4 cups vanilla ice cream
- 2 tablespoons malted milk powder
- 1/4 cup malted milk balls (such as Whoppers or Maltesers; about 1 ounce), crushed in mortar with pestle or in processor
Farro with Mushroom

1. Place the farro in a bowl, and pour on enough hot water to cover by an inch
- 1/2 ounce (1/2 cup, approximately) dried porcini mushrooms
- 1 quart chicken stock or vegetable stock
- 1 1/2 cups farro
- 2 tablespoons extra virgin olive oil
- 1/2 cup finely chopped onion
- 1 pound cremini mushrooms or wild mushrooms (or a mixture of the two), cleaned, trimmed and sliced
- Salt to taste
- 2 large garlic cloves, green shoots removed, minced
- 2 teaspoons chopped fresh rosemary
- 1/2 cup dry white wine
- Freshly ground pepper to taste
- 1 to 2 ounces Parmesan cheese, grated (1/4 to 1/2 cup)
- 1/4 cup chopped fresh parsley
Truffles - Chocolate

- 12 oz. bar of 60% cacao bittersweet chocolate
- 1/2 tsp. vanilla extract

Pasta with Veal, Sausage and Porcini Ragu

- 1 - 1 cup water
- 1 - 1 oz. dried porcini mushrooms
- 1/4 - 1/4 cup extra-virgin olive oil
- 1 - 1 small onion, finely chopped
- 1 - 1 small carrot, peeled, finely chopped
- 1/4 - 1/4 cup plus 2 tbsp. finely chopped Italian parsley
- 2 - 2 garlic cloves, finely chopped
- 8 - 8 ounces sweet Italian sausages, casings removed
- 8 - 8 ounces veal stew meat, coarsely chopped

- 1 - 1 28-ounce can whole tomatoes in juice
- 2 - 2 bay leaves
- 2 - 2 tsp. chopped fresh sage
- 1 - 1 tsp. fennel seeds, lightly crushed

- 4.5 ounces all-purpose flour (about 1 cup)
- 1 1/4 cups sugar
- 1/4 cup Dutch process cocoa
- 1/4 tsp. salt
- 1/4 cup canola oil
- 1 tsp. vanilla extract
- 3 large egg whites
- 2 large eggs
- 2 ounces bittersweet chocolate, melted
- 1/4 cup coarsely chopped walnuts, toasted
