Pan-Seared Filet Mignon

Adjust oven rack to lower-middle position, place rimmed baking sheet on oven rack, and heat oven to 450 degrees
- 4 center-cut filets mignon, 1 1/2 inches thick,
- 7 to 8 ounces each, dried thoroughly with paper towels
- 4 tsp olive oil
- Salt and ground black peppe
Asian Spinach Salad

Whisk 6 tablespoons oil, sugar, vinegar and soy sauce in small bowl to blend
- 8 Tbs olive oil
- 3 Tbs sugar
- 3 Tbs unseasoned rice vinegar
- 3 Tbs soy sauce
- 1 3-ounce package Asian noodle soup mix (such as Top Ramen), noodles coarsely broken
- 1/2 cup slivered almonds
- 2 Tbs sesame seeds
- 1 10-ounce bag ready-to-use spinach leaves

Salmon with Soy-Honey and Wasabi Sauces

Marinate salmon: Stir together mirin, soy sauce, vvinegar and ginger in a shallow dish
- For salmon:
- 1/2 cup mirin
- 2 tablespoons soy sauce
- 1/4 cup rice vinegar (unseasoned)
- 1 tablespoon finely grated peeled fresh ginger
- 4 (6 oz) pieces salmon fillet
- For sauces:
- 2 tablespoons soy sauce
- 1/4 cup honey
- 1 tablespoon fresh lime juice
- 2 teaspoons wasabi powder
- 1 tablespoon water
Pork Tenderloin with Port Sauce

Heat oil in a medium, heavy-bottomed skillet over high heat
- 2 Tbs olive or vegetable oil
- 2 (1-pound) pork tenderloins, silver skin removed, and sliced crosswise into 1-inch pieces

- 1 tablespoon olive oil
- 1 pound ground chicken (or hamburger)
- 2 cloves garlic, minced
- 1 onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoons freshly grated ginger
- 1 teaspoon Sriracha, or more, to taste
- 1 (8-ounce) can whole water chestnuts, drained and diced
- 2 green onions, thinly sliced
- Kosher salt and freshly ground black pepper, to taste
