Runza Casserole

Preheat oven to 350 degrees F
- 2 pounds ground beef
- 2 finely chopped onions
- 4 cups fresh cabbage, chopped
- salt and pepper to taste
- 2 packages refrigerated crescent rolls
- 1 pound shredded mozzarella cheese
Ambrosia Cake or "Pig Pickin Cake"

Cake: Combine cake mix, eggs, water, and butter
- Cake:
- 1 Butter Recipe Yellow Cake Mix
- 3 eggs
- 1 cup water
- 1/2 cup butter
- 1-4oz can Mandarin Oranges, drained
- Icing:
- 1 large pkg instant vanilla pudding mix
- 1-16oz can crushed pineapple
- 1-8oz container whipped topping
Alley's Oatmeal Cake

Cake: Add boiling water to oatmeal in small bowl and let stand for 20 minutes
- Cake:
- 1 cup quick oatmeal
- 1 1/2 cups boiling water
- 1 stick margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- Topping:
- 6 tbs margarine, softened
- 1/2 cup confectioners sugar
- 1/4 cup evaporated milk
- 1/2 cut chopped pecans
- 1 cup flake coconut
Pina Colada Fruit Dip

Blend all ingredients together and refrigerate
- 8 ounces crushed pineapple
- 3 1/2 ounces instant coconut cream pudding mix
- 3/4 cup milk
- 1/2 cup sour cream
Sweet Potato Jalapeno Casserole

Bake potatoes at 400 degrees F
- 5 lbs sweet potatoes
- 1/4 cup butter
- 3 large fresh jalapenos, finely chopped (use less seeds if you want it less spicy)
- 8 oz. shredded Monterey Jack cheese, divided
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Lazy Beef Potpie

Place all ingredients, except shells, into a 5
- Small bag petite carrots
- 5 celery stalks, chopped
- 1 15 oz. can low sodium beef broth
- 1/2 cup each, onion and bok choy, chopped
- 2 lbs. very small potatoes
- 3 lbs. top round pot roast, trim off fat
- 1 teaspoon Kosher salt
- 1 teaspoon each pepper, sage, ground mustard
- 32 oz. pasta shells
Loaded Cauliflower

Preheat oven to 425 degrees F
- 1 large head cauliflower, cut into bite size pieces
- 6-8 strips crisp bacon, crumbled into pieces
- 6 tablespoon chopped green onions or chives
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 cups shredded Colby Jack cheese
Zucchini Casserole

Place carrots in heavy saucepan and cover with water
- 3 large carrots, sliced
- 1 medium size onion, chopped
- 5-6 summer squash or 2 large zucchini squash, peeled and sliced
- 1 cup sour cream
- 1 small can cream of chicken soup
- 1 stick margarine
- 1 pkg Pepperidge Farm Stuffing Mix, Crushed Croutons, or Stovetop Stuffing Mix
Caramel Oatmeal Cookies

Melt butter and mix with sugars until creamy
- 2 sticks butter
- 1 cup packed light brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 3 cups quick style oats, uncooked
- 1 package Kraft Caramel Bits
Summertime Tropical Fruit Salad

In a large bowl, gently toss together the mango, papaya, oranges, kiwis, and pineapple
- 1 mango, peeled, seeded, and cubed
- 1 papaya, peeled, seeded and cubed
- 2 mandarin oranges, peeled and segmented
- 2 kiwis, peeled and sliced
- 1/2 fresh pineapple, peeled, cored, and cubed
- 1-8 oz pkg cream cheese
- 1-7 oz jar marshmallow creme
- 1 tbs vanilla
- 1 cup coconut
- 1 cup macadamia nuts, chopped
