- 2 1/2 # / 1 kg shin of beef
- 2 large onions
- 6 med carrots
- 2 Tbsp seasoned flour
- a little fat or beef drippings
- 1/2 cup dry cider
- 1/2 pt Guinness with water
- sprig of parsley
Carmel Pecan Sticky Buns

- 1/2 cup packed dark brown sugar
- 2 Tbsp unsalted butter
- 2 Tbsp honey
- 1/2 cup toasted pecans, coarsely chopped
- BUNS
- 1 (16.3oz) can of 8 large-size reduced fat buttermilk biscuits.
- 1/4 cup sugar
- 1 tsp ground cinnamon
- 1 Tbsp butter, melted
- GLAZE
- 1/3 cup conf sugar

Butternut Squash Soup w/Ginger Cream

- 3 to 4 cups chicken borth
- 1/2 tsp dried thyme, crubled
- 1/4 tsp salt
- 1/8 tsp ground nutmeg
- 1/8 tsp black pepper
- 1 Tbls finely chopped candied ginger
- 1/4 cup heavy cream, whipped

- 1 liter clear plastic soft drink bottle
- ice cubes
- Lemon peel, cut into star shapes

Meat Loaf

Beat eggs and add milk together
- Topping:
- 2 eggs
- 2/3 cup milk
- 3 slices bread
- 1/2 cup chopped onion
- 4 oz. shredded cheese
- 1 tsp salt
- 1/4 tsp pepper
- 1 1/2 # ground beef
- 1/2 cup tomato sauce
- 1/2 cup brown sugar
- 1 tsp mustard
Brunch Baked Eggs

Accompanying the eggs could be a variety of quick and yeast breads and fresh fruit
- 6 cups (24oz) Monterey Jack cheese, shredded and divided
- 12 oz fresh mushrooms, sliced
- 1/2 med onion, chopped
- 1/4 cup sweet red pepper, thinly sliced
- 1/4 cup margarine or butter, melted
- 8 oz cooked ham, cut into julienne strips
- 8 eggs, beaten
- 1 3/4 cup milk
- 1/2 cup all purpose flour
- 2 Tbls fresh chives, basil, tarragon, thyme or oregano, snipped
- 1 Tbls fresh parsley, snipped
Blue Cheese Butter Ribeyes

Serve with Horseradish Mashed Potatoes (see recipe)
- For Blue Cheese Butter:
- 2 T extra-virgin oil
- 2 T Worchestire sauce
- 1 T port wine
- 1 T Montreal steaks seasoning
- 4 8oz ribeye steaks
- 3 T butter, softened
- 3 T blue cheese, crumbled
Pork Roast with Cabbage and Apples

1) Sprinkle roast with pepper and salt; set aside
- 3 # pork shoulder roast
- 1 t ground black pepper
- 3/4 t salt
- 1/4 cup pickling spices
- 1 med head green cabbage
- 1 # new red potatoes, quartered
- 1 cup frozen chopped onion
- 1 can (14oz) reduced sodium chicken broth
- 1 cup dried apples slices
