Pork Roast with Cabbage and Apples

Ingredients

  • 3 # pork shoulder roast
  • 1 t ground black pepper
  • 3/4 t salt
  • 1/4 cup pickling spices
  • 1 med head green cabbage
  • 1 # new red potatoes, quartered
  • 1 cup frozen chopped onion
  • 1 can (14oz) reduced sodium chicken broth
  • 1 cup dried apples slices

Preparation

Step 1

1) Sprinkle roast with pepper and salt; set aside. Cut a 6-8" squre from a double thickness of 100% cotton cheesecloth. Place pickling spices in center of cheesecloth square. Bring up corners of cheesecloth and tie closed with 100% cotton string. Set aside.

2) In 5 to 6 qt slow cooker, arrange cabbage wedges. Top with roast, fat side up. Place cheesecloth bag, potatoes, and onion along sides of roast. Add chicken broth and arrange apples slices on top. Slow cooker will be full, but ingredients will cook down quickly.

3) Cover and cook on LOW heat setting for 6-8 hours.
