Pumpkin Nutella Bread

1. Preheat the oven to 350 degrees F
- 1 3/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 tablespoon cinnamon
- 1 1/2 teaspoons nutmeg
- 1 1/2 cups sugar
- 1/2 cup canola oil
- 1/3 cup water
- 1 cup canned pumpkin (not pumpkin pie filling)
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon hazelnut extract
- 8 tablespoons Nutella (2 tablespoons per mini loaf)
Ranch Dip

Place all the ingredients in a bowl and stir to combine
- 1/4 Cup Yogurt
- 2 Tbsp Vegansaise or Mayonnaise
- 1 Tbsp Chives
- 1 Tsp Lemon Juice
- 1 Tsp Dijon Mustard
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Onion Powder
- Salt to taste
Cheesy Turkey Meatloaf Bites

1. Preheat the oven to 375 degrees
- 1 Zucchini, chopped
- 1/2 Cup Onion, chopped
- 1/2 Cup Red Bell Pepper
- 1/2 Cup Baby Carrots (about 8)
- 1 Egg, beaten
- 1 Garlic Clove
- 1 Tbsp Worsteshire Sauce
- 1 Tsp Italian Herbs
- 1/2 Cup Bread Crumbs (whole wheat, preferably)
- 1/2 Cup Cheddar Cheese, white or orange, shredded
- 1 Lb. Ground Turkey (93% lean ground meat)
Zucchini Carrot Muffins

They are not very sweet. The raisins help with sweetness
- 1 c milk
- 1 c oatmeal
- 2 small to medium carrots, grated (1 grated on the finest grating, the other grated at a larger grating)
- 1/2 small zucchini , grated
- 1/4 c brown sugar
- 1/4 c oil (or applesauce)
- 1 egg
- 2 tsp grated orange rind
- 1 c flour (I use whole wheat)
- 1 Tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 c raisins
- 1 tsp agave nectar for added sweetness
PB&J Panini

1. Cut the banana in half
- 2 Bananas
- 8 Slices Whole Wheat Bread
- ¼ Cup Jelly, Jam or Preserves
- ¼ Cup Peanut Butter (you can also use sunflower, almond or cashew butter)
Minted Watermelon Salad

1. Cut up a quarter of a medium watermelon (about 2 pounds) and arrange on a plate

Green Chile Burgers

Caramelize the onions: Combine olive oil, butter and sliced onions in a skillet over medium-low heat
- 1 lb ground beef (ground turkey breast)
- 8 Tbsp diced roasted green chiles (fresh are much better than canned!)
- 4-6 large cloves roasted garlic
- salt & pepper to taste
- 4 soft hamburger buns
- 4 slices Jalapeno Monterrey Jack Cheese

- 5 or 6 thick slices challah
- 3 eggs + 2 egg whites (alt: 4 eggs)*
- 1 cup lowfat milk (alt: half and half)*
- 1/4 cup maple syrup (alt: 1/2 cup maple syrup)*
- 1 cup 100% pure canned pumpkin
- 1 tablespoon pumpkin pie spice
