Sweet Corn Muffins

PREHEAT oven to 350°F. Grease or paper-line 18 to 20 muffin cups
- 1 1/2 cups all-purpose flour
- 2/3 cup granulated sugar
- 1/2 cup Albers® White or Yellow Corn Meal
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 1/4 cups milk
- 2 large eggs, lightly beaten
- 1/3 cup vegetable oil
- 3 Tbsp butter or margarine, melted
Creole Vegetable Jambalaya

1. Heat vegetable oil in large pot
- Shrimp:
- 3 tablespoons vegetable oil
- 1 large onion, sliced
- 4 medium carrots, cut into 1/2-inch pieces
- 1 medium sweet green pepper, cored, seeded, cut into 1-inch pieces
- 1 medium sweet red pepper, cored, seeded, cut into 1-inch pieces
- 1 medium head cauliflower, separated into flowerets (cut large flowerets in half)
- 2 cloves garlic, finely chopped
- 3 cans (14.5 ounces each) stewed tomatoes
- 3 tablespoons tomato paste
- 1 can (14.75 ounces) vegetable broth
- 1 tablespoon creole seasoning
- 1/2 teaspoon salt
- 1 yellow summer squash, halved lengthwise, sliced crosswise into 1/4-inch-thick half moons
- 1/2 pound chorizo, chopped
- 2 tablespoons olive oil
- 1 1/4 pounds large shrimp (31 to 35 per pound), shelled and deveined
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Bacon Pizza

1. Preheat oven to 425. Lightly brush a half-sheet pan (18 × 13-in
- 16 oz. store-bought pizza dough
- 8 oz. fresh mozzarella, grated
- 1 cup heavy cream, reduced to 1/2 cup
- 1/4 cup grated Pecorino-Romano cheese
- 2 eggs
- Black pepper
- 1/2 lb. bacon slices, cut into 1/2-in. strips, cooked and drained
- 2 scallions, sliced
Quadruple Chocolate Brownies

Mix all ingredients together, stirring in chocolate chips last
- 1 box devil's food cake mix, dry
- 1 box brownie mix, dry
- 1 cup Hershey's syrup
- 1 cup chocolate chunks or chips (semi-sweet or milk)
- 3 eggs
- 1 1/3 cups water
- 1/2 cup vegetable oil
- 1 container fudge frosting
Grilled Shrimp & Tropical Salsa

Drain the fruit salad, reserving juice
- 1 (15 1/4 ounce) can tropical fruit salad
- 1/2 cup cilantro, chopped
- 1 large jalapeno, seeded and chopped
- 1 lime (Both juice and zest)
- 24 large shrimp, about 1 1/2 pounds,shells removed and deveined
Strawberry Sauce

Place the strawberries, sugar, vanilla and lemon juice in a medium saucepan over medium-high heat
- 4 pounds strawberries, hulled
- 2 cups sugar
- 2 teaspoons vanilla
- 1 lemon, juiced
Perfect Pina

In a large pitcher with ice, stir together the pineapple juice, bourbon, Simple Syrup and lime juice
- 16 ounces pineapple juice
- 12 ounces bourbon
- 3 ounces Simple Syrup, recipe follows
- 1 1/2 ounces fresh lime juice
- 4 ounces prosecco
- Fresh basil sprigs, for garnish
Red-Wine and Chile Flank Steak

To make marinade, add all ingredients except steak to a blender and puree
- 1 cup dry red wine
- 1 chipotle pepper with adobo sauce
- 1 tablespoon garlic, minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 16 ounces flank steak
Flat Apple Pie with Perfect Pie Crust

Preheat the oven to 375 degrees F
- 5 Granny Smith apples, peeled and sliced
- 1/2 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- Juice of 1/2 lemon
- 1 recipe Perfect Pie Crust, recipe follows
- 6 tablespoons butter
- Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl. Yield: dough for 2 crusts
Blackened Fish with Green Rice

Cook the rice according to package directions
- 1 c. long-grain white rice
- 2 c. fresh flat-leaf parsley
- 1 tsp. grated lemon zest
- 3 tbsp. olive oil
- Kosher salt and pepper
- 3 tbsp. paprika
- 0.75 tsp. garlic powder
- 0.75 tsp. dried thyme
- 0.25 tsp. cayenne pepper
- 2 tbsp. fresh lemon juice
- 4 tilapia fillets
- Lemon Wedges
