Heat oven to 450 degrees F
- 0.50 lb. Lean Ground Beef
- 2 tbsp. Ketchup
- 1 tbsp. Worcestershire sauce
- 2 tsp. whole-grain mustard
- black pepper
- 4 pita breads
- 0.50 c. jarred pizza sauce
- 0.50 small Red Onion
- 1 c. cherry or grape tomatoes
- 0.75 c. shredded cheddar
- 1 c. baby arugula
Amazing Roasted Vegetable Soft Tacos

Heat oven to 450 degrees F
- 1 each red and yellow bell peppers, cut into bite sized pieces
- 1 lb of asparagus, ends snapped off, cut into thirds
- 1 each zucchini and yellow squash, halved length wise and sliced
- 1 red onion thinly sliced in rings
- 1 cup baby carrots
- 3 tablespoon olive oil
- salt and pepper to taste
- whole wheat tortillas
- 1 can of Busch's Chili Magic pre-seasoned beans (med traditional is vegan) *if you cannot find Chili Magic, a can of red kidney beans can be used instead, but is not as flavorful

Combine the shredded green and purple cabbage in a large bowl
- 1/2 head green cabbage, thinly sliced
- 1/2 head purple cabbage, thinly sliced
- 2 cups whole milk, plus more if needed for thinning

- 2 tablespoons sugar
- 4 teaspoons white vinegar

- 1 cup canned black beans, drained
- 1 cup canned kidney beans, drained

- 1 red bell pepper, chopped
- 1/4 cup chopped fresh cilantro

- 1/4 cup red wine vinegar

- 1/2 teaspoon salt

White bean burgers with creamy cucumbers
