Bud Light Berry Blast

In a shaker with ice, pour 6 ounces beer, daiquiri mix and simple syrup

- 12 ounces Bud Light, divided use
- 1 1/2 ounces strawberry daiquiri mix
- 1/2 ounce simple syrup (see note)

Cajun Pinto Beans & Rice

- 1/2 tsp. dried thyme
- 1 cup white rice (uncooked)
- 2 15.5-ounce cans pinto beans (drained)
- 4 cups vegetable broth

- 2 cups whole-milk ricotta cheese

- 1/2 cup julienned oil-packed sun-dried tomatoes

- Kosher salt and freshly ground black pepper
- Nonstick cooking spray, for greasing the baking dish

- 5 1/2 cups (about 1 pound, 8 ounces) onions, medium dice
- 1 clove garlic, chopped
- 2 red peppers, seeds and ribs removed, medium dice
- 2 medium eggplant, skin on, medium dice
- 2 medium zucchini, medium dice
- 2 yellow squash, medium dice
- 8 Roma or plum tomatoes, coarsely chopped
- 11/2 tablespoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon chopped thyme
- 2 tablespoons chopped basil
