Chipotle's Spicy Corn Salsa

1. Roast the corn and Poblano chilies on a grill or BBQ and let cool
- 6 Ears Sweet Yellow Corn
- 2 Poblano Chilies
- ½ Red Onion
- 2 Red Jalapenos
- 1/3 Cup Chopped Cilantro
- 1 Tablespoon Lime Juice
- Salt and Pepper to Taste
Sangria

- Half fill a liter with ice
- Add chopped/sliced friut-orange, lemon, apple
- TBSP sugar
- 3 long dashes of Bacardi, Cointreau and Brandy
- half or 3/4 fill jug with red wine, preferably Spanish wine
- long dash of OJ
- Top with La Casera, lemonade or sprite
Spaghetti with Kale Pesto

Add the kale, garlic, Parmesan, almonds, salt, pepper and red pepper flakes to the bowl of a food processor
- 8 oz. kale (Tuscan if available), stemmed, leaves torn (5 cups loosely packed leaves)
- 1 clove garlic
- 1 cup grated Parmesan
- 1/2 cups raw almonds
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 pinch crushed red pepper flakes
- 6 Tbsp olive oil
- 8 oz whole wheat spaghetti
Escalloped Cabbage Casserole

Preheat the oven to 350 degrees F
- 2 tablespoons butter, plus more for greasing the pan
- Kosher salt
- 1 head green cabbage
- 2 tablespoons all-purpose flour
- 1 cup milk
- Freshly ground black pepper
- One 15-ounce jar processed cheese sauce or dip, such as Cheez Whiz
- 1 cup grated pepper Jack cheese
- 1 jalapeno pepper, sliced into rounds, seeds removed
