In a med. saucepan, boil the wine & halved garlic cloves till reduced to 1/4 C, about 8 min
- 11/2 C. Dry Red Wine
- 4 Garlic Cloves, 3 Halved, 1 Minced
- 1/2 C. Low-Fat Mayonnaise
- 1/2 C. Low-Fat Yogurt
- 1/4 tsp. Ground Cumin
- Pinch of Cayenne Pepper
- Salt & Freshly Ground Black Pepper
- 4 Lg. Artichokes, Stems Trimmed
Beurre Rouge Steak Sauce

- 2 Thyme Sprigs

- 2 Tbsp. each Dijon Mustard & Liquid Honey
- 1 Tbsp. Extra-Virgin Olive Oil

- 2 Tbsp. Butter
- 3 Onions, thinly sliced.
- 1/4 C. Currants
- 1 Tbsp. Balsamic Vinegar

- 1/4 C. plus 2-3 Tbsp. Extra-Virgin Olive Oil

- Kosher Salt
- 2 C. Short Grain Risotto Rice , such as Arborio or Carnaroli
- 1 C. Dry White Wine
- 1/2 tsp. Saffron Threads, steeped in 1/2 C. hot water for at least 5 min.
