- 8 ounces provolone or mozzarella, shredded
- 2 tablespoons butter, at room temperature
- 1 1/2 tablespoons mayonnaise
- 2 teaspoons Dijon mustard
- 1 garlic clove, chopped
- 1 loaf wheat or sourdough bread, crusts removed
- 1 pound ham, sliced
- 6 tablespoons olive oil
Mandarin Topped Pork Chops

In a skillet, sear chops on both sides in oil
- 6 pork chops
- 1 tablespoon oil
- 1 (11 ounce) can mandarin oranges, drained
- 1/2 teaspoon ground cinnamon

Caesar Salad (Traditional)

- 2 cloves garlic, smashed with a pinch of salt and a little olive oil
- 1 1/2 teaspoons anchovy paste
- 4 egg yolks*
- 1 tablespoon Dijon mustard
- 1 lemon, juiced
- 2 tablespoons water
- 1/2 cup extra-virgin olive oil
- 1/4 cup freshly grated Parmesan, plus extra for garnish

- Seasoning:
- 1/4 cup dark molasses
- 3 tablespoons balsamic vinegar

- 1 naval orange, zest
- 4 (1" thick) boneless, center cut pork chops

- 1 tablespoon crushed coriander
