  • Toasted Walnut Cake:
  • 4 ounces walnuts, lightly toasted
  • 4 ounces light brown sugar
  • 1/2 vanilla bean
  • 4 ounces cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 cup milk
  • 2 tablespoons canola oil
  • 2 tablespoons maple syrup
  • 4 ounces unsalted butter, room temperature
  • 2 large eggs, room temperature
  • Preheat the oven to 350ºF. Butter an 8-inch round cake pan and line with parchment paper. Set aside.
  • Maple Mousse:
  • 10 ounces grade B maple syrup
  • 4 gelatin sheets
  • 12 egg yolks
  • 1/4 teaspoon kosher salt
  • 2 1/3 cups heavy cream
