- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 3/4 cup sugar
- 6 tablespoons cocoa
- 1/2 cup milk
- 2 tablespoons melted butter
- 1 cup chopped nuts (I used almonds)
- 1 cup light brown sugar
- 1 3/4 cups hot water
Maple Walnut Trifle

- Toasted Walnut Cake:
- 4 ounces walnuts, lightly toasted
- 4 ounces light brown sugar
- 1/2 vanilla bean
- 4 ounces cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/4 cup milk
- 2 tablespoons canola oil
- 2 tablespoons maple syrup
- 4 ounces unsalted butter, room temperature
- 2 large eggs, room temperature
- Preheat the oven to 350ºF. Butter an 8-inch round cake pan and line with parchment paper. Set aside.
- Maple Mousse:
- 10 ounces grade B maple syrup
- 4 gelatin sheets
- 12 egg yolks
- 1/4 teaspoon kosher salt
- 2 1/3 cups heavy cream

- 15 oz good tuna in oil, w/oil (I like Tonno brand)
- 3 TBSP chopped tarragon
- 2 tsp chopped parsley
- 1/2 cup finely diced fennel
- 1 stalk celery, finely sliced
- 1/4 cup minced red onion
- 2 TBSP lemon juice
- 1/2 cup loosely packed celery leaves
- 1/4 cup mayonnaise
- Freshly ground black pepper, to taste
- Kosher salt, to taste
- Pinch sugar, to taste
