honey mustard dressing

put all ingredients except oil and blend add oil and continue to blend until thick
- 2 cloves garlic chopped

- 1/2 cup vinegar/Balsamic or raspberry
- 3 tbsp Dijon mustard
- salt and pepper

Mojito Salad

Soak the onion in the juice of one lime for at least 2 hours or overnight
- Salad:
- 1/2 cup red onion, halved and thinly slice crosswise
- Juice of one lime
- One medium jicama, peeled and cut into matchsticks
- One english cucumber, sliced 1/4 inch thick
- 1/2 seedless watermelon, cut into 1" cubes
- 1 pound strawberries, hulled and halved lengthwise
- 1/2 fresh mint leaves
- Dressing:
- 1/2 cup vegetable oil
- 1/2 cup honey
- 1/2 cup fresh lime juice (2 1/2 limes)
- 1 1/2 tsp. sea salt
- 3 tsp. light rum (optional)

1. Bring vegetable, tomatoes, water, cheese rind and 1 tsp salt to boil in a soup pot
- 2 small leeks (or 1 large), white and light green parts sliced thin crosswise (about/34 cup) and washed thoroughly
- 2 medium carrots, peeled and cut into small dice (3/4 cup)
- 3 medium celery stalks, trimmed and cut into small dice (3/4 cup)
- 1 medium baking potato, peeled and cut into medium dice (1 1/4 cups)
- 1 medium zucchini, trimmed and cut into medium dice (1 1/4 cups)
- 2 cups stemmed spinach leaves, cut into thin strips
- 1 can (28 oz) whole tomatoes packed in juice, drained and chopped
- 8 cups of water
- 1 Parmesan cheese rind, about 5x2 inches
- 1 can (15 oz) cannelloni beans, drained and rinsed
- 1/4 cup basil or 1 tbsp. fresh rosemary mixed with 1 tsp. olive oil

- 2 tbsp soy sauce
