Arugula with Parmesan

Directions If the arugula has roots attached, cut them off
- 1/2 pound fresh arugula (3 large bunches)
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 1/2 cup good olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 -pound chunk very good Parmesan
Chicken Tagine With Rhubarb

Season chicken on both sides with salt and pepper
- 1 whole chicken, 4 to 4 1/2 pounds, cut into 10 pieces
- Salt and pepper
- 2 tablespoons extra-virgin olive oil
- 1 small onion, finely chopped
- 1 medium carrot, diced
- 2 leeks, white and light green parts, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon turmeric
- 1 teaspoon sweet paprika
- 2 1/2 cups chicken broth or water
- 1 3-inch cinnamon stick
- 1/2 teaspoon sugar
- 12 to 16 pitted green olives (optional)
- 1 to 2 tablespoons rhubarb syrup (see Poached Rhubarb recipe)
- 1/4 cup chopped parsley
- Poached rhubarb (see recipe)
- Rice or couscous for serving

- 1/4 cup Roasted Garlic Herb Sauce or high-quality pesto, plus more for serving

Every spring, I promise I’m going to share a recipe for chopped liver
- 1 oz dried porcini or cope mushrooms
- 1 c. boiling water
- 1/4 c. olive oil
- 2 tbsp. butter, divided
- 1 1/2 c. diced onion and shallots
- salt and pepper to tase
- 1 1/2 lbs. fresh mushrooms, stems discard and roughly chopped
- 1/2 tsp. dry thyme
- 1/4 c. madeira, marsala or sherry, or 1.2c. white wine
- serve with sieved egg
