Grilled Apple, Bacon and Cheddar Sandwich with Roasted Red Onion Mayo

Preheat a seasoned grill pan or griddle over medium heat
- Sandwich:
- 4 slices (1/2-inch-thick) sourdough, multigrain or another hearty bread
- 8 slices thick-cut bacon, cooked crisp
- 8 slices Cheddar
- 1 Granny Smith apple, cored, sliced thin
- Roasted Red Onion Mayo, recipe follows
- Butter
- Red Onion Mayo:
- 1 medium red onion, chopped
- 2 teaspoons olive oil
- Salt and pepper
- 1 cup mayonnaise
Grilled Panzanella

Heat grill to med-high. Brush the grilling rack with olive oil
- Good olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon Dijon mustard
- 2 tablespoons champagne vinegar
- Kosher salt and freshly ground black pepper
- 1/2 hothouse cucumber, unpeeled, seeded and sliced 1/2-inch thick
- 1 large ripe tomato, cut into 1-inch cubes
- 10 large basil leaves
- 3 tablespoons capers, drained
- 1 red onion, sliced into 1/4 inch rounds
- 1 red bell pepper, seeded and cut into 3 large pieces
- 1 yellow bell pepper, seeded and cut into 3 large pieces
- 1/2 small baguette, cut into 1-inch thick slices
Turnips with Roasted Garlic Goat Cheese & Sesame

Heat oven to 350°. Combine garlic and 1 1/4 cups oil in a small baking dish
- 1 head of garlic, halved crosswise
- 1 1/4 cups plus 2 tablespoons olive oil, plus more for drizzling
- 8 ounces goat cheese
- Kosher salt, freshly ground pepper
- 1 tablespoon black and/or white sesame seeds
- 1 teaspoon finely grated lime zest
- 1 teaspoon chopped fresh oregano
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon sumac
- 12 ounces small turnips (about 16), peeled, half quartered, half thinly sliced into rounds
- 1 tablespoon Sherry vinegar or red wine vinegar
- Cilantro leaves with tender stems and mint leaves (for serving)
Peanut Butter Cookie Sandwiches Stuffed with Grape Jelly Ice Cream

- Grape Jelly Ice Cream:
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/2 cups flour
- 3/4 teaspoons baking soda
- 1/4 teaspoon salt
- 1/2 cup peanut butter
- Grape jelly ice cream, recipe follows
- 1 quart vanilla ice cream
- 1/2 cup grape jelly
Spicy Thai Pork Larb (8 points)

Heat a large nonstick skillet over medium-high heat
- 1 pound ground pork
- 4 medium shallot(s), peeled, sliced in half and then sliced 1/4-inch thick, divided
- 2 Tbsp fresh lime juice, divided
- 2 medium scallion(s), sliced
- 1 Tbsp fish sauce
- 1 tsp chili sauce, hot Asian-style, or to taste
- 1/4 cup mint leaves, fresh, coarsely chopped
- 1/4 cup cilantro, leaves, fresh, coarsely chopped
- 12 leaf/leaves Boston lettuce
- 1 average kirby cucumber, thinly sliced
White Gazpacho

In a large saucepan of boiling salted water, cook the cauliflower until tender, about 8 minutes
- 1/2 medium head cauliflower, cut into 1-inch florets
- 2 slices of crustless white bread
- 1/4 cup pine nuts (1 1/2 ounces)
- 2 garlic cloves, coarsely chopped
- 2 tablespoons sherry vinegar
- 1 large shallot, coarsely chopped
- 1 1/4 cups blanched slivered almonds
- 1/2 medium seedless cucumber, peeled and coarsely chopped, plus 1/4 cup finely diced cucumber
- 1/3 cup extra-virgin olive oil
- Kosher salt
Short Rib Chili Nachos

Heat oven to 325 degrees. Season short ribs with 3 teaspoons salt and the black pepper
- 4 pounds bone-in beef short ribs, patted dry
- 5 teaspoons coarse kosher salt, more to taste
- 1 1/2 teaspoons black pepper
- 5 garlic cloves, smashed and peeled
- 2 jalapeño or serrano peppers, halved lengthwise, seeded if desired
- 1 onion, peeled and quartered lengthwise
- 1 (28-ounce) can chopped tomatoes
- 1/2 cup coarsely chopped cilantro stems, and 1/4 cup chopped leaves
- 2 teaspoons dried oregano
- 2 tablespoons extra-virgin olive oil
- 1 to 2 tablespoons chile powder, to taste
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 tablespoon tomato paste
- 1 bottle Mexican lager, like Negra Modelo
- 1 (13-ounce) package corn tortilla chips
- 8 ounces white Cheddar cheese, grated (2 cups)
- 4 avocados, peeled, pitted and diced
- Juice of 1 lime
- 1 1/2 cups store-bought fresh salsa, preferably salsa verde
- 1 cup Mexican crema or sour cream
- Hot sauce
Hemingway Cocktail

- 4 oz white rum
- 0.5 oz maraschino liqueur
- juice of 1/2 limes
- 2 oz fresh pink grapefruit juice
