Mexico City Shrimp with Chipotle Mojo

Preheat the oven to 325°
- 2 heads of garlic (about 26 cloves), peeled and cloves crushed
- 1 1/2 cups extra-virgin olive oil
- Kosher salt
- 1/4 cup fresh lime juice
- 1 chipotle in adobo sauce, seeded and minced
- 2 pounds medium shrimp—shelled and deveined, tails left intact
- Freshly ground pepper
- Chopped cilantro, for garnish
- Lime wedges, for serving
Asian Turkey Burgers

Preheat the oven to 200 degrees F to keep the first batch of burgers warm
- Burgers:
- Extra-virgin olive oil
- 1 onion, cut into 1/4-inch dice
- Kosher salt
- 2 cloves garlic, smashed and finely chopped
- 1 package ground turkey
- 1/8 cup soy sauce
- 1 tablespoon sambal oelek, optional
- 1-inch piece fresh ginger, peeled and grated
- One 8-ounce can water chestnuts, drained and coarsely chopped
- 1/2 bunch fresh cilantro leaves, finely chopped
- Optional Garnishes:
- 2 slices Cheddar
- 2 seeded burger buns
- 1/8 cup mayo mixed with 2 teaspoons sambal oelek
- 2 slices beefsteak tomatoes
- 2 slices raw red onion
- Butter lettuce
Lemon & Rosemary Compound Butter

Let butter stand at room temperature for 10 minutes
- 1 stick butter
- 1 tbs. finely shredded lemon peel
- 1 tbs. snipped fresh rosemary
Italian Lemonade

Mix lemon juice, Basil Simple Syrup, and water together in a pitcher

- 2 cups lemon juice, about 12 to 15 lemons

In a saute pan heat a little oil over med-high heat and saute shallots, onions, and garlic for one minute
- 1 ⁄2 lb lobster meat, cut into fine chunks
- 2 tablespoons minced shallots
- 2 tablespoons chopped green onions

- 1 ⁄4 cup white wine
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Tabasco sauce
- 1 teaspoon dried thyme
- 6 tablespoons dry sherry

- 1 cup hot water
- 1 teaspoon lobster base (better than boulion)
- 4 ounces tomato paste
- 2 bay leaves

- 3 tablespoons extra-virgin olive oil
- 1 carrot, finely diced
- 1 onion, finely diced

- 1/2 cup duck sauce or plum sauce
- 1/2 teaspoon crushed red pepper flakes
- 1 package (2 cups) shredded provolone or Monterey Jack cheese
- 1/2 red bell pepper, thinly sliced
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 rounded tablespoonful peanut butter
- 2 teaspoons hot sauce
