Chocolate Pistachio Cake

Cake: Heat the oven to 350°F
- Cake:
- 1 cup all-purpose flour
- 1/3 cup dark cocoa powder plus more for dusting the pans
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 ounces unsweetened chocolate coarsely chopped
- 1/4 cup plus 2 TBS unsalted butter melted
- 3/4 cup plus 2 TBS cups granulated sugar
- 1 large egg
- 1/2 tablespoon vanilla extract
- 3/4 cups buttermilk
- 1/4 cup strong brewed coffee cooled
- Frosting:
- 3/4 cups unsalted pistachios shelled
- 1/2 teaspoon canola oil
- 1 cup unsalted butter softened
- 1 tablespoons heavy cream
- 1/2 tablespoon vanilla extract
- 1/8 teaspoon salt
- 1 1/2-3 cups confectioners' sugar
- 1/1-2 drops green food coloring
- 1/2 cup unsalted pistachios shelled and chopped (for garnish)
- Ganache:
- 1 ounce semisweet chocolate coarsely chopped
- 1 tablespoon unsalted butter cut into pieces
- 1/2 tablespoon light corn syrup
Osso Buco Milanese

Serve with Saffron Risotto!!! In a large shallow platter, season flour with salt and pepper
- GREMOLATA:
- 1/2 cup flour
- Salt and pepper, to taste
- 4 pieces veal shank with bone, cut 3 inches thick
- 3 tablespoons olive oil
- 3 tablespoons butter
- 1 onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup carrots, chopped
- 4 cloves garlic, coarsely chopped
- 2 bay leaves
- 3 tablespoons fresh Italian parsley, finely chopped
- 1 cup dry Marsala
- 2 cups veal or chicken stock
- 2 tomatoes, peeled, seeded and chopped
- Saffron Risotto, recipe follows
- Grated rind of 1 lemon
- Grated rind of 1 orange
- 2 garlic cloves, minced
- 2 tablespoons fresh Italian parsley, chopped
Pier House Mustard Sauce

Whisk mustard and mayonnaise together in a medium size glass bowl
- 1 Pint Mayonaisse
- 1/2 Cup Dark Mustard (Guldens)
- 1/2 Cup Nellie & Joe's Key Lime Juice
Campfire Bacon with Maple-Citrus Glaze

Light a grill or preheat a grill pan
- 1/4 cup pure maple syrup
- 2 tablespoons sherry vinegar
- 1 teaspoon finely grated orange zest
- 1 teaspoon finely grated lime zest
- Four 3/4-inch-thick slices of skinless slab bacon, halved crosswise
- Freshly snipped chives, for garnish
Chili Dip (2 points)

Combine all ingredients in a saucepan and set over medium heat
- 15 oz canned turkey chili without beans
- 1/2 cup(s) fat-free cream cheese
- 4 oz canned jalapeno peppers, drained and chopped
- 1 small onion(s), finely chopped
- 1/2 tsp hot pepper sauce
Jícama Salad with Watercress, Romaine and Lime-Cilantro Dressing

Combine all dressing ingredients in a blender jar
- For the Lime-Cilantro Dressing:
- 3/4 cup vegetable oil, olive oil or a mixture of the two
- 1/3 cup fresh lime juice
- 1/2 teaspoon grated lime zest (colored rind only)
- 1/2 cup (packed) cilantro, thick lower stems broken off
- Fresh hot green chiles to taste (I like 2 serranos or 1 jalapeño), stemmed and roughly chopped (optional)
- 1 scant teaspoon salt
- 1 medium (about 1 pound) firm, unblemished jícama, peeled and cut into sticks (1/4-inch is a good width, 2 inches a good length)
- 1 medium bunch watercress, large lower stems broken off
- 4 good-size romaine leaves, cut crosswise in 1/4-inch slices
Ultimate Pizza Dough

In a small bowl, combine the yeast, sugar and water and stir gently to dissolve
- 2 packages active dry yeast
- 2 teaspoons sugar
- 2 cups warm water (100 to 110 degrees F.)
- 2 tablespoons kosher salt
- 6 cups unbleached all-purpose flour, plus more for dusting
- 2 tablespoons extra-virgin olive oil, plus extra for bowl
Stuffed Cabbage Rolls (Galumpkis)

Coat a 3-quart saucepan with the oil and place over medium heat
- Sweet and Sour Tomato Sauce:
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, smashed
- 1 1/2 quarts crushed tomatoes
- 2 tablespoons white wine vinegar
- 1 tablespoon sugar
- Kosher salt and freshly ground black pepper
- Cabbage Rolls:
- 11/4 cup extra-virgin olive oil
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- Splash dry red wine
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 pound ground beef
- 1 pound ground pork
- 1 large egg
- 1 1/2 cups steamed white rice
- Kosher salt and freshly ground black pepper
- 2 large heads green cabbage, about 3 pounds each
Honeycomb Candy

- 1 1/2 cups sugar
- 1/2 cup water
- 3 tablespoons honey
- 1/3 cup corn syrup
- 4 teaspoons baking soda, sifted
- 1 large bar of chocolate for dipping

- 1/2 tsp table salt, for cooking water
- 1 pound(s) asparagus, trimmed and cut into bite-size pieces
- 2 spray(s) cooking spray
- 1 Tbsp unsalted butter
- 3 small shallot(s), minced
- 1 cup(s) uncooked arborio rice
- 1 Tbsp fresh lemon juice
- 4 cup(s) canned chicken broth
- 1/3 cup(s) grated Parmesan cheese, such as Parmigianno-Reggiano
- 1/8 tsp table salt, or to taste
- 1/8 tsp black pepper, or to taste
