Spicy Lamb Burger

Using a fork, mix lamb, onion, parsley, coriander, cumin, cinnamon, salt, pepper, and ¼ cup oil in a large bowl
- 2 1/2 pounds ground lamb, preferably shoulder
- 1 medium onion, very finely chopped
- 3/4 cup chopped fresh flat-leaf parsley
- 1 tablespoon ground coriander
- 3/4 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 2 teaspoons kosher salt
- 1 1/2 teaspoon freshly ground black pepper
- 1/4 cup olive oil, plus more for grilling
- 8 thick medium pita breads with pockets
Strawberry Arugula Salad with Sweet Lime Vinagrette

Toss the strawberry slices, arugula and parmesan crumbles in a large bowl
- 8 strawberries, hulled and thinly sliced (about 1 cup)
- 10 cups baby arugula
- 4 ounces parmesan cheese, crumbled with the tip of a knife (about 1 cup)
- 1 tablespoon dijon mustard
- 1 tablespoon sugar
- 2 tablespoons fresh lime juice
- 1/4 cup fresh orange juice
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground pepper
Wheat Berry Salad

In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries
- 1 1/2 cups hard wheat berries
- 3/4 cup chopped walnuts
- 2 stalks celery, finely chopped
- 1/2 cup tart dried cherries, chopped
- 1 scallion, white and green parts, chopped
- 1/2 cup finely chopped parsley leaves

Sauté the scallions, celery and apples in the canola oil until tender
- •1/4 cup thinly sliced scallions
- •1/2 cup finely chopped celery
- •3 Granny Smith apples , peeled and diced
- •1/8 cup canola oil
- •4 pounds ground turkey breast
- •2 Tbsp. salt
- •1 Tbsp. black pepper
- •2 tsp. Tabasco® chipotle pepper sauce
- •1 lemon , juiced and grated zest
