Apple Cider Vinaigrette

Mix well
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 cup excellent quality extra virgin olive oil
- 1/4 cup opal basil leaves or regular basil, cut into thin ribbons
Espresso Martini

Chill 2 martini glasses. Combine all but beans in cocktail shaker with ice and shake until chilled and frothy
- 6 oz vodka
- 4 oz coffee liqueur
- 4 oz brewed espresso, chilled
- 2 oz creme de cocao, white
- 6 coffee beans (for garnish)
Chicken Tikka Masala

This classic masala is often the first dish many try when exploring Indian food
- MASALA MARINADE:
- 1 cup plain low-fat yogurt
- 2 garlic cloves, minced
- 1 tablespoon finely grated fresh ginger
- 1-1/2 teaspoons ground cumin
- 1-1/2 teaspoons ground coriander
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground turmeric
- Salt
- freshly ground pepper
- CHICKEN:
- 2 1/2 pounds skinless, boneless chicken thighs, fat trimmed
- Salt and freshly ground pepper
- 2 tablespoons plus 1 teaspoon vegetable oil
- 1/4 cup blanched whole almonds
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon minced fresh ginger
- 1-1/2 tablespoons garam masala
- 1-1/2 teaspoons pure chile powder
- 1/2 teaspoon cayenne pepper
- One 35-ounce can peeled tomatoes, finely chopped, juices reserved
- Pinch of sugar
- 1 cup heavy cream
Cinnamon Sugar Pumpkin Muffins

1.Preheat oven to 350F. 2
- • 2 3/4 cups all purpose flour
- • 1 tsp salt
- • 1 tsp ground cinnamon
- • 1 tsp baking soda
- • 2 cups sugar
- • 2/3 cup brown sugar
- • 3 eggs
- • 1 15 oz can pumpkin
- • 3/4 cup coconut oil (can substitute vegetable oil)
- • 1/4 cup Almond Breeze Almond milk original
- • 1 tsp vanilla extract
- Cinnamon Sugar Topping
- • 2/3 cups sugar
- • 2/3 cup chopped pecans
- • 1 tsp ground cinnamon OR pumpkin pie spice
Shrimp and Pork Wontons

In a large bowl, mix all of the ingredients except the wonton wrappers and chili oil
- 5 ounces raw shrimp—shelled, deveined and chopped
- 1/4 pound fatty ground pork
- 2 ounces napa cabbage, finely chopped (3/4 cup)
- 1 ounce prosciutto, minced
- 2 scallions, finely chopped
- 1 tablepoon minced peeled fresh ginger
- 2 teaspoons Shaoxing wine
- 2 teaspoons canola oil
- 2 teaspoons cornstarch
- 1 teaspoon kosher salt
- 1 teaspoon Asian fish sauce
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon toasted sesame oil
- 36 wonton wrappers
- Chili oil, for dipping

Soften yeast in 1/4 cup warm water
- 1 pkg dry yeast
- 1/4 C warm water
- 2 Tbl sugar
- 2 tsp salt
- 1/2 C dry skim milk powder
- 2-4 Tbl vegetable oil
- 1-1/2 C thick sourdough starter
- 1-1/2 C water
- 4 C flour

- 2 1/2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 cup (2 sticks) unsalted butter, room temperature
- 3/4 cup sugar
