Pickled Peppers

Place peppers and shallots in medium bowl
- 1 pound sweet or mild mini bell peppers, sliced crosswise into 1/4-inch thick rounds, seeded
- 2 large shallots, thinly sliced, separated into rings
- 2 C white wine vinegar
- 1/2 C sugar
- 3 Tbl Water
- 5 fresh thyme sprigs
- 2 large garlic cloves, thinly sliced
- 1/4 tsp dried crushed red pepper
- Pinch of coarse kosher salt
Milk Chocolate-Caramel Tart with Hazelnuts and Espresso

For crust: Blend flour, powdered sugar, and salt in processor
- Crust:
- 1 1/4 cups unbleached all purpose flour
- 1/3 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
- 1 tablespoon (or more) ice water
- Filling:
- 3/4 cup sugar
- 1/4 cup water
- 1/3 cup heavy whipping cream
- 2 tablespoons (1/4 stick) unsalted butter, cut into 1/2-inch cubes
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon salt
- 2/3 cup hazelnuts, toasted , husked, coarsely chopped
- Topping:
- 1/3 cup heavy whipping cream
- 1 1/2 teaspoons instant espresso powder
- 4 ounces high-quality milk chocolate (such as Lindt, Perugina, or Valrhona), chopped
- 1 tablespoon unsalted butter
- 1 tablespoon cacao nibs*
- Special equipment: 1 13 3/4 x 4 1/2-inch rectangular tart pan with removable bottom
- * Bits of shell-roasted cacao beans; available at many specialty foods stores and from chocosphere.com.
Prosciutto and Carrot Bundles

In medium bowl, toss carrots, vinegar, oil, salt and pepper
- 2 carrots, shredded, about 1/2 C
- 1 Tbl balsamic vinegar
- 2 Tbl olive oil
- Pinch salt
- Pinch freshly ground pepper
- 4 slices prosciutto
- 4 whole basil leaves
Braised Beef Pierogies

In a medium bowl, combine the shredded pot roast with the softened cream cheese and chives
- Filling:
- 4 cups shredded pot roast (cooled)
- 8 ounces cream cheese (softened)
- 1/2 cup finely sliced chives
- pierogie dough (recipe below)
- 2 eggs (beaten with 2 tablespoons of water)
- 2 tablespoons unsalted butter
- 1 yellow onion (thinly sliced)
- freshly grated horseradish (to garnish)
- kosher salt and freshly ground black pepper
- Pierogie Dough:
- 1 large egg
- 3/4 cup sour cream
- 8 tablespoons unsalted butter (softened)
- 1 tablespoon chopped chives
- 1 teaspoon kosher salt
- 2 cups all-purpose flour (plus more for dusting)
Stuffed Chicken Marsala

1.Preheat oven to 400 degrees
- For Chicken:
- 4 medium boneless skinless chicken breasts
- 8 slices mozzarella cheese
- 1 12-ounce jar julienned sun dried tomatoes packed in oil, drained (if you can't find them julienned you can buy sun dried tomato halves and thinly slice them yourself)
- 2/3 cup shredded parmesan cheese
- 3 tablespoons oil
- salt and pepper, to taste
- 2 teaspoons Italian seasoning
- Marsala Sauce:
- 1 1/2 cups marsala cooking wine (may sub chicken broth)
- 3 teaspoons minced garlic
- 1 cup sliced mushrooms
- 1/2 cup heavy cream
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- grated parmesan, chopped parsley or thyme
Chicken Scaloppine with Hazelnut Cream Sauce

- 2 skinless boneless chicken breast halves
- 1 tablespoon butter
- 1 tablespoon canola oil
- 1 large shallot, minced (about 1/4 cup)
- 1/4 cup Madeira
