Stuffed Yukon Gold Potatoes

- 4 Yukon Gold potatoes, unskinned and halved
- 2 Tbl olive oil
- 1 Russet potato, peeled
- 3 oz Roquefort
- 1 egg yolk
- 2 scallions, sliced diagonally
Crisp Potato Cake

Step 1Pat potatoes dry if very starchy or moist
- 2 pounds (about 3 medium) potatoes, peeled and sliced very thinly
- 1 tablespoon olive oil, or as needed
- Freshly ground nutmeg
- Freshly ground black pepper
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced garlic
- Salt

- 500 g white flour
- 25 g honey (1 Tbl)
- 25 ml olive oil
- 5 g salt
- 1 tsp dried herbs (or fresh)
- 10 g bi carbonate soda
- 1 ball buffalo mozzarella
- 2 whole peppers roughly chopped and roasted
- 100 g cherry tomatoes, halved
- 360 ml buttermilk
English Toffee

Combine all but chocolate and almonds in wide heavy saucepan
- 1/2 C butter
- 1/2 C margarine
- 1 C sugar
- 3 Tbl water
- 1 Tbl corn syrup
- 6 ounces milk chocolate
- 1 C chopped almonds, toasted at 350 degrees for 10 minutes
Southwest Turkey Burgers

Chop your garlic and veggies
- 8 slices turkey bacon or turkey bacon with black pepper or applewood smoked bacon
- 1 1/3 pounds ground turkey breast, the average weight of 1 package
- 2 cloves garlic, finely chopped
- 1 large shallot or 1/4 red onion, finely chopped
- 2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
- 2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
- 1/2 small bell pepper, green, red or yellow, seeded and finely chopped
- 1 serrano or jalapeno pepper, seeded and finely chopped
- 2 teaspoons, 2/3 palm full, ground cumin
- 1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
- 2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
- Vegetable oil or olive oil, for drizzling
- 1/2 pound deli sliced pepper jack cheese
- 4 crusty kaiser rolls, split
- 1 cup sweet red pepper relish, found on condiment aisle - pepper jelly may be substituted
- Red leaf lettuce

Carnitas in Mole Verde

Carnitas: Place the meat and bay leaf in a large Dutch oven, and add just enough water to barely cover it
- Carnitas:
- 3 pounds pork shoulder (cut into 1-inch cubes)
- 1 bay leaf
- 6 medium tomatillos (husks removed, cut into 2-3 pieces each)
- 1/2 cup pumpkin seeds (shelled & toasted)
- 1/2 cup sesame seeds (toasted)
- 2 roasted hatch or Anaheim chilis
- 2 cloves garlic
- 1 white onion (chopped)
- 1 cup baby spinach
- 2 Hoja Santa leaves (chopped)
- 1 small bunch of cilantro, plus 1 more
- 1 medium zucchini (cubed)
- 1 medium chayote (cubed)
- Green Tomato Pico de Gallo:
- 3 firm green tomatoes (chopped into 1/4 inch dice)
- 1/2 small red onion (chopped into 1/4 inch dice)
- 1/4 cup fresh lime juice
- 2 tablespoons fresh cilantro (chopped)
- 2 jalapenos (chopped with seeds)
- 1 teaspoon salt
- Watermelon Hot Sauce:
- 2 tablespoons extra virgin olive oil

- 12 oz unpeeled small Yukon Gold potatoes, sliced into very thin rounds
- 1-13.8 oz tube refrigerated pizza dough
- 2 tsp rosemary, chopped
- 2 tsp sage, chopped
- 2 cloves garlic, chopped
- 1/4 tsp dried crushed red pepper
- 1 C mozzarella cheese, grated (4 oz)
- 1/2 C finely grated Parmesan cheese
