Chinese Chicken Salad

For Salad: Cook chicken in water with sliced ginger root until done, about 20-30 minutes
- For Salad:
- 3 chicken breasts
- 2 slices fresh ginger root
- 1 large head lettuce, shredded
- 1/4 package (4 oz) rice sticks
- 1/2 C toasted almonds
- 1/4 C toasted sesame seeds
- 2 Green onions, finely chopped
- For Dressing:
- 4 Tbl sugar
- 2 tsp salt
- 1 tsp MSG
- 1/2 tsp black pepper
- 4 Tbl white wine vinegar
- 1/2 C salad oil
Duchess Potatoes

Peel potatoes and cut into large pieces
- 6 medium potatoes (2 lbs)
- 1/4 C milk
- 1/4 C butter, softened
- 1/2 tsp salt
- dash pepper
- 1 egg, beaten
- 1 Tbl butter, melted
Pumpkin Lasagna

Preheat the oven to 350 degrees
- 1 cup pumpkin puree
- 1 1/2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 4 to 6 cloves garlic, sliced
- 1 pound spicy Italian sausage, casings removed
- 1/2 cup red wine
- 1 28 -ounce can tomato sauce
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon dried oregano
- Kosher salt and freshly ground pepper
- 1 16 -ounce box lasagna noodles
- 1 large egg
- 2 1/2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup shredded romano cheese
Limoncello Pasta

Place a large pot of salted water over high heat and bring to a boil
- 1 pound of 2-foot long pasta, regular spaghetti may be used
- 1 clove garlic, crushed
- 1 1/4 cups heavy cream
- 1/4 cup limoncello or white wine
- 2 lemons, 1 peeled and 1 zested
- 1 cup (loosely packed) basil leaves, torn
- Salt and freshly ground black pepper
- 1 cup shredded Parmigiano-Reggiano cheese

- Grade B Madagascar bourbon vanilla beans
- Vodka, 80 proof (vodka has the most neutral flavor but you can also use bourbon, brandy, or even rum as long as it's 80 proof) (750 ml = 25.36 oz)
- 2 ounce brown glass jars
- 4 ounce brown glass jars
- Metal funnel for pouring
- For single-fold vanilla extract (like the kind you find in most stores): Use .8 ounces (or 22 grams) of vanilla beans per 1 cup of vodka. 750 ml = 3.17 cups. 2.5+ ounces of beans
- For double-fold vanilla extract (much stronger flavor and many professional bakers prefer it): Use 1.6 ounces (or 44 grams) of vanilla beans per 1 cup of vodka)Need 5+ ounces of beans.
Garlic Shrimp with Chiles de Arbol

Heat ¼ cup oil in a large skillet over medium heat
- 1/2 cup olive oil
- 4 garlic cloves, finely chopped
- 2 dried chiles de árbol, crumbled, or 1/2 tsp. crushed red pepper flakes
- 1 pound small shrimp, peeled, deveined
- Kosher salt
- 1 tablespoon coarsely chopped fresh flat-leaf parsley
- Crusty bread (for serving)
Fresh Tangerine Cake

Preheat the oven to 350 degrees F
- Tangerine Icing:
- Vegetable oil cooking spray
- 2 1/2 cups all-purpose flour
- 1 3/4 cups sugar
- 1 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 3 eggs, beaten
- 1 cup vegetable oil
- 1 (8-ounce) container sour cream
- 1 cup tangerine juice
- 1 tablespoon tangerine zest
- Tangerine Icing, recipe follows
- 1/2 cup butter, room temperature
- 1 (8-ounce) package cream cheese, room temperature
- 6 cups confectioners' sugar
- 3 tablespoons tangerine juice
- 1/2 tangerine, zested
- Mix together the butter, cream cheese and sugar together in a large bowl. Add the tangerine juice and zest and combine well.
Tagliatelle with Prosciutto and Orange

Bring a large pot of water to a boil
- Kosher salt
- 12 oz. egg tagliatelle or fettuccine (preferably fresh)
- 2 Tbsp. (1/4 stick) unsalted butter
- 2 oz. thinly sliced prosciutto, torn into 1" pieces
- Zest and juice of 1 orange
- 1/2 cup heavy whipping cream
- Freshly ground black pepper
- 1/4 cup finely grated Parmesan
Blueberry-Lemon Jam

- 2 Tbl lemond rind
- 2 Tbl lemon juice
- 1 tsp lemon extract
- 3 C sugar
- 1 C honey

- 4 oz lemon juice
- 8 oz white vinegar
- 10 oz water
