GREEK-SPICED BAKED SHRIMP

Preheat oven to 375F with rack in middle
- 1 medium onion, chopped
- 1 garlic clove, finely chopped
- 3 tbsp extra-virgin olive oil
- 1/2 tsp hot red pepper flakes
- 1 , 28-oz whole tomatoes, in juice, drained, reserving juice and chopped
- pinch of sugar
- 1 1/4 lb peeled and deveined shrimp
- 2/3 cup feta, crumbled
- 2 tbsp chopped dill
SMOKED SALMON & BOURSIN IN CUCUMBER CUPS

Score cucumbers with a fork and slice horizontally into 1/2 inch rounds
- 3 cucumbers about 8 inches in length, unpeeled
- 1 lb herbed boursin cheese

LEMON RICE SALAD

- 1/4 cup minced shallots or scallions (white and green parts)
- 2 tbsp olive oil
- 1 cup basmati or jasmine rice, well rinsed
- 2 cups rich vegetable or chicken stock
- 1 tsp grated lemon zest
- 2-1/2 tbsp fresh lemon juice
- 1/3 cup roughly chopped cilantro, basil, mint, or a mix
- 1 tsp finely minced garlic
- 1/2 cup finely diced red onion, rinsed in cold water
- 1/2 cup diced red bell pepper
- 1/3 cup lightly toasted pine nuts, pepitas, or chopped cashews

- 2 green onions, thinly sliced

CHILI CON QUESO WITH VELVEETA CHEESE

- 1 lb package Velveeta cheese
- 3-4 mashed canned tomatoes, drained
- 1 can jalapeno peppers, drained and chopped
- Pinch garlic powder
- 2 green onions, finely chopped
FETTUCCINE WITH LOBSTER, SAFFRON, PEAS & OYSTER MUSHROOMS

Cook fettuccine in a large pot of boiling, lightly salted water until just tender (al dente)
- 3/4 lb fettuccine or linguini
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 lb oyster mushrooms, sliced and lower stems discarded
- 1/2 cup dry white wine
- 1/2 tsp saffron threads
- 1 tbsp chopped fresh tarragon
- 2 cups whipping cream
- 1 1/2 lb cooked lobster, meat removed and thinly sliced
- 1/2 cup frozen peas
- Salt and freshly ground pepper to taste
- 2 green onions, finely chopped
BRISKET WITH BUTCH'S SEASONING

Day Before: Cut brisket in to pieces about 1 foot long
- 1/3 cup salt
- 1/3 cup chili powder
- 2 1/2 tsp MSG
- 1 1/2 tsp pepper
- 1 tbsp garlic powder

Preheat oven to 375°F (190°C)
- 1 pound ground beef
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1 tablespoon chili powder
- 1/4 teaspoon black pepper
- 1 teaspoon crushed red pepper
- 2 tablespoons cold water
- 1 cup sour cream
- 2 tablespoons salsa
- 1/4 cup finely chopped ripe olives
- 3/4 cup coarsely crushed tortilla chips
- 1/2 cup shredded cheddar cheese
- Sour cream
- Salsa
MARGARITAS

In a blender, combine the tequila, Cointreau, 1 cup lime juice, and sugar
- 1 cup Gold Tequila
- 1 cup Cointreau
- 1 cup fresh lime juice, plus 1 or 2 lime wedges or additional juice in a shallow bowl
- 1/4 cup superfine sugar
- Kosher salt for dipping glass rims
- 6 cups ice cubes
- Note: Very strong, could reduce liquor by 1/4 to 1/3.
