GARLIC CHEESE BREAD

Mix first 7 ingredients together and spread over loaf (which has been sliced in half lengthwise)
- 1 cup butter
- 4 green onions, finely chopped
- 1 clove garlic, minced
- 1 cup Parmesan cheese
- 1/2 tsp basil
- 1/4 tsp oregano
- 1/4 tsp pepper
- 1 loaf French bread
RUM SAUCE

Bring apple juice to a boil
- 2 cups apple juice
- 2 tbsp sugar
- 2 tbsp cornstarch
- 1/2 tsp cinnamon
- Pinch of ground cloves
- 1/4 tsp nutmeg
- Pinch of salt
- 3 tbsp rum
SPRING SALAD WITH ASPARAGUS, KAMUT & LEMON VINAIGRETTE

Add the water and the Kamut to a small heavy saucepan and bring to a boil
- 1 3/4 cups water
- 1 cup Kamut berries, soaked overnight and drained (or substitute quinoa or couscous)
- 1 or 2 lemons, preferable organic
- 2 tsp Dijon mustard
- 3/4 tsp fine sea salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup minced shallots (about 1 medium)
- 1/4 cup pumpkin seeds
- 1 small bunch asparagus, rinsed and trimmed (scant 1 lb)
- 1/2 cup loosely packed chopped fresh dill
- 1/4 cup plus 2 tbsp extra virgin olive oil
- 1/2 to 3/4 cup thinly shaved Parmesan
COCKTAIL MEATBALLS WITH CRANBERRY & CHILI SAUCE

Combine beef, water, onion, eegs, crumbs,and salt and shape into bite- chili sauce, brown sugar, and lemon juice
- 2 lbs lean ground beef
- 1/4 cup water
- 1 small onion, grated
- 2 eggs, beaten
- 1 cup cracker crumbs or unseasoned bread crumbs
- 1 1/2 tsp. salt
- 1 (1-lb) can jellied cranberry sauce
- 1 (12-ounce) bottle chili sauce
- 2 Tbls brown sugar
- 1 Tbls lemon juice
ZUCCHINI WITH PARMESAN & ALMONDS

- 4 zucchini (about 2lb/900 g)
- 1 tbsp each olive oil and butter
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/3 cup toasted silvered almonds
- 1 tbsp chopped fresh tarragon
- 1/3 cup shaved Parmesan cheese (about 1 oz/30 g)
ROMESCO SAUCE

Pulse first 8 ingredients in a food processor until very finely chopped
- 1 large roasted red bell pepper from a jar
- 1 garlic clove, minced
- 1/2 cup slivered almonds, toasted
- 1/4 cup tomato puree
- 2 tbsp chopped flat-leaf parsley
- 2 tbsp sherry vinegar
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 cup extra-virgin olive oil
- Fine sea salt and freshly ground black pepper
BRUSSELS SPROUTS WITH BROWN BUTTER, LEMON, BACON & PECANS

Position racks in the top and bottom thirds of the oven and heat the oven on convection to 425F
- 1 1/2 lb Brussels sprouts, trimmed and cut through the core into halves
- 3 tbsp extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 4 tbsp unsalted butter
- 1 tbsp minced shallot
- 2 tbsp freshly squeezed lemon juice; more to taste
- 1 1/2 tsp chopped fresh thyme
- 1 tsp lightly packed finely grated lemon zest
- 1/4 tsp Dijon mustard
- 4 slices bacon, cooked and diced
- 1/3 cup pecans,chopped and toasted

- 3/4 cup flour
- 1/2 cup butter, cubed
- 1/2 pecans, toasted and chopped
- 1/3 sweetened flaked coconut, toasted
- 1/4 cup sugar
- 1/4 tsp salt
- Filling:
- 4 eggs
- 1 cup sugar
- 1/3 cup flour
- 1 tbsp key lime zest
- 2/3 cup key lime juice (about 16 limes)
- 1/3 cup sweetened flaked coconut, toasted
CRUNCHY APPLE BEEF

To make the marinade, combine the soy sauce and cornstarch in a bowl and mix well
- For the marinade:
- 2 tsp soy sauce
- 1 tsp cornstarch
- For the beef:
- 3/4 lb flank steak, cut into 1/2" cubes
- Grated zest of 1/2 lemon
- 1 tbsp fresh lemon juice
- 1/4 tsp Chinese five-spice powder
- 1 Granny Smith apple, cored and cut into 1/2" cubes
- 1 tbsp vegetable oil
- 1/2 red bell pepper, seeded and cut into 1/2" dice
- 1/2 green bell pepper, seeded and cut into 1/2" dice
- 3 green onions, cut into 2" lengths
FLORENTINE ALMOND BARK

- 3 tbsp all-purpose flour
- 1/2 c unsalted butter, plus 2 tbsp more
- 2/3 c white sugar
- 3 tbsp honey
- 2 tbsp whipping cream
- 3/4 best quality semi-sweet chocolate (I use Callebaut cooking drops)
