- 1/3 cup mayonnaise
- 1/4 tsp finely grated lime zest
- 2 tsp fresh lime juice
- Chopped fresh cilantro
TOMATO CROSTINI

- 2 egg yolks
- 1/3 cup lemon juice
- 1 tbsp grated lemon rind
- 2 egg whites
- 1/4 cup sugar
- 2 cups whipping cream
VINAIGRETTE DRESSING

- 1/2 cup white wine vinegar
- 2 tbsp minced parsley

GOAT CHEESE & PISTACHIO SPREAD

- 3 (3.5-ounce) logs of mild soft goat cheese such as Montrachet
- 1 stick (1/2 cup) unsalted butter, softened
- 1 large garlic clove, minced and mashed to a paste with 1 teaspoon salt
- 1/4 cup chopped pistachio nuts, toasted lightly and cooled
- 1/4 cup thinly sliced chives plus chive blades for garnish
- 1 loaf French bread, cut into 1/4-inch thick slices and toasted slightly
WILD RICE WITH ROASTED GRAPES, PECANS & SAGE
