BAKED CHEVRE ON BLACK BEAN SALSA

- 1 19-oz/540 mL can black beans, drained and rinsed
- 1 cup corn niblets
- 1 sweet red pepper roasted (page 49), peeled, seeded, and diced
- 2 tomatoes, seeded and diced
- 1 chipotlE or jalapeno, finely chopped
- 1 clove garlic, minced
- 1/2 cup fresh cilantro or basil
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/2 pepper
- 6 oz chevre (goat cheese)
CHERRY ROSEMARY MUFFINS

Preheat the oven to 375F. Lightly grease or line two 12-cup muffin tins
- 3 1/2 cups flour
- 1 tsp Kosher salt
- 1 1/2 tbsp baking powder
- 1 1/2 cups sugar
- 2 medium oranges
- 2 large eggs, beaten
- 1 1/2 cups milk
- 1/2 cup unsalted butter, melted
- 1 1/2 cups dried cherries, lightly chopped
- 2 tbsp chopped fresh rosemary
CHOCOLATE-ALMOND BARK WITH SEA SALT

- 1/2 cup sugar
- 1 tbsp unsalted butter
- 1 1/2 cups roasted almonds
- 1 lb good quality dark chocolate, finely chopped
- Coarse sea salt (for sprinkling)

- Unseasoned meat tenderizer
- Lawry's seasoned salt
- Celery salt
- Garlic salt
- 3 tablespoons Figaro's liquid smoke
- 1/4 cup Worcestershire sauce
RED WINE SANGRIA (Pat)

- 2 cups fresh orange juice
- 1/3 cup sugar
- 1 bottle white wine
- 1/2 bottle red wine
- 2 tbsp Grand Marnier
- 1 sliced orange
- 1 sliced lemon
- 1 sliced peach
- Sliced strawberries
- 1 can club soda

If scallops are frozen, partially defrost according to package directions
- 1 pound frozen scallops
- 1 tablespoon butter or margarine
- 2 tablespoons finely chopped onion
- 1 1/2 teaspoons lemon juice
- 1/4 teaspoon salt
- Few leaves dried marjoram, crushed
- Dash paprika
- 6 tablespoons white wine
- 1 (4 ounce) can mushroom stems and pieces, drained
- 3 tablespoons butter or margarine
- 2 tablespoons flour
- 1/2 cup heavy cream
- 1 teaspoon finely chopped parsley

- 1/2 cup chopped pecans, divided
- 38 ginger snaps, finely crushed (about 1 1/2 cups)
- 1/4 cup butter, melted
- 4 , 8 oz pkg. cream cheese, softened
- 1 cup sugar
- 1 , 15 oz can pumpkin
- 1 tbsp pumpkin pie spice
- 1 tsp vanilla
- 4 eggs
- 25 caramels
- 1/4 cup milk
- 1/2 pint whipping cream, whipped
SNOWBALL COOKIES

Heat oven to 325F. In a large mixing bowl, combine flour, pecans, sugar, butter and vanilla
- 2 cups flour
- 2 cups finely chopped pecans
- 1/4 cup sugar
- 1 cup butter, softened
- 1 tsp vanilla
- Icing sugar
CRAB DIP

- 1/2-3/4 cup mayonnaise
- 1 tsp curry powder
