SAUCY APPLE CAKE

Preheat oven to 350F. Grease a 9" square cake pan
- Cake:
- 1 cup sugar
- 1/4 cup butter, cubed, at room temperature
- 2 eggs
- 1 cup flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups chopped peeled apples (McIntosh)
- Sauce:
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup 18% cream
- 1/4 cup butter
BLUEBERRY MOJITO

Add blueberries, lime juice, sugar and eight mint leaves to a cocktail shaker
- 8 blueberries (fresh or frozen and thawed), plus more for garnish
- 2 tbsp freshly squeezed lime juice
- 1 tsp sugar
- 8 fresh mint leaves, plus more for garnish
- 1/4 cup white rum
- 1 cup ice
- 2 tbsp club soda
- Lime slice for garnish
OVERNIGHT CINNAMON ROLLS

Put dinner rolls into bundt pan
- 1 package frozen dinner rolls (18 per bundt pan)
- Pam
- 3/4 cup pecans
- 1/2 package butterscotch pudding (not instant)
- 3/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup raisins
- 3/4 cup butter, melted
CEDAR-PLANKED SALMON WITH CREAM DILL SAUCE

Salmon: Mix pistachios and Panko crumbs together
- Salmon:
- 5 (8-oz/225 g) pieces of fresh Atlantic salmon
- 1 cup (250 ml) unsalted pistachios, roughly chopped
- 1/2 cup (125 ml) Panko crumbs
- 2 tsp (10 ml) olive oil
- 1 tsp (5 ml) fresh dill, chopped
- 2 tsp (10 ml) Dijon mustard
- 1/4 cup (50 ml) fresh orange juice and
- Zest from 1 orange
- 2 cedar planks
- Cream Dill Sauce:
- 1 cup (250 ml) sour cream
- 3 tsp (15 ml) mayonnaise
- 1/4 cup (50 ml) fresh dill, finely chopped
- 2 tsp (10 ml) capers, finely chopped
- 1 jalapeno pepper, unseeded, finely chopped
- 1 green onion,finely chopped
- Lemon juice from 1 fresh lemon
RIGATONI WITH ITALIAN SAUSAGE TOMATO SAUCE

In a large saucepan, melt butter over medium heat
- 2 tbsp butter
- 1 onion, chopped
- 1 clove garlic, minced
- 1 tsp oregano leaves
- 1/2 tsp each dried basil and salt
- 1/4 tsp hot pepper flakes
- 1 lb Italian sausage, cut into bite size-chunks
- 28 oz can plum tomatoes, drained
- 1/4 cup tomato paste
- 1 cup 18% cream
- 12 oz package rigatoni
GREEN GODDESS DRESSING (Eileen)

Blend and refrigerate overnight
- 6 anchovy fillets
- 1/4 cup chopped green onion (tops only)
- 1/4 cup chopped parsley
- Salt and pepper
- 1/4 cup tarragon vinegar
- 1 cup mayonnaise
- 1 tsp mustard
- 1/4 cup chopped chives
SHRIMP & BEAN STIR-FRY

Stir together shrimp, ginger, 1/4 tsp of the salt and pepper
- 12 oz shrimp, peeled and deveined
- 1 tsp finely grated fresh ginger
- 3/4 tsp salt
- Pinch white pepper
- 12 oz green string beans, trimmed
- 1/3 cup chicken stock
- 1 tsp cornstarch
- 2 tbsp peanut oil
- 1 clove garlic, minced
- 3 tbsp oyster sauce
- 2 green onions (white and light green parts only), sliced
- 1 tsp sesame oil
