CRISPLY CHOCOLATE PEANUT BUTTER SQUARES

Line 8-inch (2 L) square cake pan with parchment paper
- 4 cups rice crisp cereal
- 1/2 cup granulated sugar
- 1/3 cup corn syrup
- 1/2 cup smooth peanut butter
- 1/3 cup butter, melted
- 340 g semisweet chocolate, (about 12 oz), chopped
APPLE, BACON & CHEDDAR GRILLED CHEESE

Butter 1 side of all bread slices
- 8 slices whole grain bread
- 2 tbsp (30 mL) butter
- 4 tsp (20 mL) grainy mustard
- 4 tsp (20 mL) apricot jam
- 1 cup (250 mL) arugula
- 1 apple, thinly sliced
- 8 slices Cheddar cheese (about 4 oz/125 g)
- 4 slices bacon, cooked and cut in half
CREPES WITH HAZELNUT CREAM FILLING & LEMON/RASPBERRY SAUCE

Dessert Crepe Batter: Measure all ingredients, except flour into large mixing bowl
- BASIC DESSERT CREPES/BLINTZES:
- 4 large eggs
- 1 c all purpose flour
- 1/2 c milk
- 1/2 c water
- 1/2 tsp salt
- 2 Tbsp melted butter, no substitution
- 2 tsp granulated sugar
- 1 tsp vanilla
- FILLING:
- 1 package cream cheese, softened
- 1/4 cup icing sugar
- 1 envelope Dr. Oetker' Vanilla Sugar
- 1/2 cup ground hazelnuts
- 1 cup whipping cream, whipped stiff
- RASPBERRY SAUCE:
- 1/2 c sugar
- 1 1/2 tsp cornstarch
- 1/2 c water
- 2 tsp lemon juice
- 1 1/2 c raspberries
STIR-FRIED JICAMA & SNOW PEAS

Combine soy sauce, garlic, ginger, sesame oil, chili sauce and sugar in a small bowl and set aside
- 3 tbsp soy sauce
- 1 garlic clove, finely chopped
- 1 tbsp finely chopped fresh ginger
- 2 tsp sesame oil
- 1 tsp hot chili-garlic sauce
- 1/2 tsp granulated sugar
- 1 peeled jicama, about 375 g
- 250 to 500 g snow peas, trimmed
- 1/4 cup chopped cilantro
- 1 tbsp vegetable oil
SHRIMP WITH BACON HERB DIP

In large skillet over medium-high heat, cook bacon, turning often, just until crisp, about 5 minutes
- 3 slices bacon
- 3 green onions, sliced
- 1 clove garlic, minced
- 1/2 cup 2% plain Greek yogurt
- 1/2 cup reduced-fat mayonnaise
- 1/4 cup each chopped fresh basil and fresh parsley
- Pinch each of salt and pepper
- 2 lb frozen cooked large shrimp, thawed
OLIVE BRUSCHETTA

Combine butter, cheese, olives and pepper
- 1/4 cup (50 mL) butter, softened
- 1/4 cup (50 mL) shredded feta cheese
- 3 tbsp (40 mL) chopped ripe olives
- Dash freshly ground pepper
- 18 - 20 baguette slices, 1/4 inch (6 mm) thick
SHRIMP TACOS WITH AVOCADO CILANTRO CREAM

- Tacos:
- 3/4 pound large cooked shrimp (about 24 shrimp)
- 1/2 cup diced tomato
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon unsalted butter
- 2 tablespoons fresh lime juice
- Salt and pepper
- 1/4 teaspoon chili powder
- 1/2 teaspoon Tabasco
- 3/4 teaspoon cumin
- 1/4 teaspoon garlic salt
- 2 cups thin sliced romaine lettuce
- 1/4 cup thin sliced red onion
- 1 cup shredded Monterrey Jack cheese
- Flour tortillas
- Avocado Cilantro Cream:
- 1/2 cup sour cream
- 1 ripe avocado
- 1/2 cup chopped cilantro
- 2 limes, juiced
- 1/2 teaspoon lime zest
- Salt and pepper
