ROMAINE & RED CABBAGE SALAD

Stir dressing ingredients together; set aside
- Salad:
- 8 cups torn romaine lettuce
- 2 1/2 cups halved cherry tomatoes
- 2 cups thinly sliced red cabbage
- 1 sweet green pepper, thinly sliced
- 1/2 fennel bulb, thinly sliced
- 2 green onions, finely chopped
- 3 tbsp sunflower seeds
- 1/3 cup crumbled feta cheese
- Greek Yogurt Dressing:
- 1/2 cup Greek-style yogurt
- 1/4 cup extra-virgin olive oil
- 1/4 cup crumbled feta cheese
- 3 tbsp finely chopped fresh dill
- 3 tbsp lemon juice
- 1 clove garlic, minced
- 3/4 tsp dried Greek oregano
- 1/2 tsp pepper

- 1 , 11 oz log fresh goat cheese, softened
- 4 oz smoked cheddar cheese, shredded (1 packed cup)
- 1/2 cup mayonnaise
- 1/4 cup drained jarred pimientos, coarsely chopped
- 2 green onions, white and green parts, thinly sliced
- 1 tbsp sweet pickle relish
- 1 tsp onion powder
- 1 tsp Tabasco sauce
- Salt and freshly ground pepper
- Halved radishes and celery sticks, for serving
SIZZLIN' STUFFED PEPPERS

Cook rice until tender. Cut tops off peppers, remove seeds, and boil pepper cases for 5 minutes
- 1/2 cup uncooked rice
- 6 large green peppers
- 1 lb ground beef
- 1 medium onion, chopped
- 1/2 cup finely diced celery
- 2 tbsp bacon drippings
- 1 1/2 cups grated Cheddar cheese
- 1 1/2 tsp celery seed
- 1/2 to 3/4 can Rotel tomatoes and green chilies (10 oz can)
- Salt and pepper
- 1 can condensed tomato soup
- 1 soup-can water, or a little more
- 1 can (8 oz) tomato sauce
CONFETTI CORN

Heat the olive oil over medium heat in a large saute pan
- 2 tablespoons good olive oil
- 1/2 cup chopped red onion
- 1 small orange bell pepper, 1/2-inch diced
- 2 tablespoons unsalted butter
- 4 cups kernels cut from 5 ears of yellow or white corn
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons of julienned fresh basil, minced fresh chives, and/or minced fresh parsley leaves
ROASTED TOMATOES WITH BASIL

Preheat the oven to 450 degrees
- 12 plum tomatoes, halved lengthwise, seeds (not cores) removed
- 1/4 c. good olive oil
- 1 1/2 tbsp. aged balsamic vinegar
- 2 large garlic cloves, minced
- 2 tsp. sugar
- 1 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- 10 large fresh basil leaves, julienned

Preheat oven to 325F. Coat or spray 8" square baking dish with oil
- 1 cup flour
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 6 oz semi-sweet chocolate, about 6 squares
- 1/2 cup unsalted butter
- 3 eggs
- 1 cups sugar
- 1 tsp vanilla
LEMON-FETA CHICKEN BREAST

- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp coarse salt
- 1/4 tsp black pepper
- 4 boneless, skinless chicken breasts
- 8 tbsp crumbled feta cheese
- 4 tsp chopped green onions
CHOCOLATE PECAN PIE BARS

Preheat oven to 350F. Line the bottom and sides of a 9 x 13 baking pan with aluminum foil
- 1/2 cup unsalted butter, room temperature
- 2 tbsp unsalted butter, melted
- 1/4 cup packed light brown sugar
- 1 1/4 cups flour
- 1/2 tsp salt
- 3 large eggs
- 3/4 cup light corn syrup
- 1/2 cup granulated sugar
- 1 package (11.5 oz) semi-sweet chocolate chips
- 2 cups coarsely chopped pecans
FRUIT SALAD (AUNT IDA)

- 2 eggs
- 3 tbsp lemon juice
- 1 tbsp cold water
- 4 tbsp sugar
- 3 tbsp butter
- 2 cups diced pineapple
- 1 can mandarin oranges
- 2 cup pitted cherries
- 1 cup seedless grapes
- 2 cups mini marshmallows
- 1 cup whipping cream

- 2 cups flour
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs, room temperature
- 1 cup buttermilk
- 1/3 cup canola oil
- 1 tsp vanilla extract
- 1 1/3 cups fresh strawberries, chopped
