MAPLE MUSTARD PULLED PORK

Place pork, fat side up, in slow cooker
- 3 lb pork shoulder or butt roast
- 1/2 cup maple syrup
- 3 tbsp prepared mustard
- 3 tbsp Canadian whiskey
- 3 tbsp cider vinegar
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1 large onion, minced
- 1/2 tsp each of salt and pepper
- 1/4 tsp ground cloves
- 3 green onions, chopped
SHRIMP CHIP DIP

Mix well and chill
- 1 - 4 oz pkg cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- Salt and pepper to taste
- 2-3 drops Tabasco
- 1/2 lb bay shrimp or 2 cans shrimp
- 1 tsp onion powder
SOFRITO BAKED SHRIMP

In bowl, toss together potatoes, oil, salt and pepper
- 2 red potatoes, scrubbed and cut in scant 1/4" thick slices
- 1 tsp olive oil
- 1/4 tsp each of salt and pepper
- 3/4 cup coarsely chopped sweet red pepper
- 1/2 cup coarsely chopped seeded Cubanelle pepper
- 1/2 cup coarsely chopped red onion
- 1/4 cup packed fresh cilantro
- 1 tbsp lime juice
- 1 clove garlic
- 1/4 tsp hot pepper flakes
- 1 cup cherry tomatoes, quartered
- 8 oz frozen deveined peeled jumbo shrimp, thawed
- 1/2 cup crumbled feta cheese

Heat brown sugar, sugar and salt with syrup
- 1/2 cup white corn syrup
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1 package chocolate chips
- 1 cup peanut buter
- 3 cups Rice Krispies
- Dash salt
GRILLED SHRIMP SALAD WITH SPICY PEANUT DRESSING

For Salad: Combine lettuce, spinach, onions, peppers and asparagus in a large bowl and set aside
- Salad:
- 4 cups Mesclun mix salad
- 4 cups baby spinach
- 3 green onions, green party only, sliced in 1" pieces on the diagonal
- 1 red pepper, cored and deveined, sliced into thin strips
- 12 trimmed asparagus spears, blanched, chilled, and cut into 2" lengths
- Shrimp:
- 1 1/2 lbs raw shrimp, peeled, and deveined, (16-20 per pound)
- 1 tbsp vegetable oil
- 2 tsp Cajun seasoning
- Dressing:
- 2/3 cup creamy peanut butter
- 1 garlic clove, minced
- 2 tbsp honey
- 2 tbsp mirin
- 1/3 cup soy sauce
- Salt and pepper to taste
- 1/2 cup rice wine vinegar
- 1 tsp grated fresh ginger root
- 1 tsp Sambal Oelek
- 1/4 cup water
- 2 tbsp toasted sesame seeds
BAKED SHRIMP SCAMPI

- 2 lb shrimp in the shell
- 3 tbsp extra virgin olive oil
- 2 tbsp dry white wine
- Salt and freshly ground pepper
- 12 tbsp (1 1/2) sticks unsalted butter, at room temperature
- 2 cloves garlic, minced
- 2-3 tbsp shallots, minced
- 3 tbsp minced fresh parsley leaves
- 1 tsp minced fresh rosemary leaves
- 1/4 tsp crushed red pepper flakes
- 1 tsp grated lemon zest
- 2 tbsp freshly squeezed lemon juice
- 1 extra large egg yolk
- 2/3 cup Panko crumbs
- Lemon wedges, for serving
MEDITERRANEAN DIP (Edie Gillespie)

Combine ingredients and add 1/4 to 1/2 cup of the artichoke marinade and refrigerate 1 hour to 3 days
- 1 1/2 cups crumbled feta cheese
- 1 (6 oz) jar of artichokes, drained and chopped (save the marinade)
- 1/2 cup chopped Kalamata olives
- 4 tsp drained and chopped sun-dried tomatoes
- 2 tsp dried oregano (or 1 tbsp fresh)
- 2 clove garlic, minced
ROASTED ASPARAGUS WITH LEMON BROWN BUTTER

PREHEAT OVEN TO 450F (230F)
- 1 BUNCH ASPARAGUS 1
- 1 TBSP OLIVE OIL 15ML
- 1 TSP SALT 5ML
- FRESHLY GROUND BLACK PEPPER
- 3 TBSP BUTTLER 45ML
- 1 TBSP FRESHLY SQUEEZED LEMON JUICE 15ML
GRILLED MOZZARELLA JALAPENOS

Cut jalapeno peppers in half lengthwise and remove all the seeds by scraping the inside with a spoon
- 6 large jalapeno peppers
- 1 cup Mozzarella cheese, grated
- 1/4 cup mild salsa
- 1 tbsp lime juice
- 1/4 cup cilantro, chopped
- 2 tbsp breadcrumbs
