- 1/4 lb bacon, cut into 1" pieces
- 1/2 onion, finely chopped
- 2 medium green peppers, cut into 1" strips
- 1 cup long grained rice
- 1 clove garlic,crushed
- 1 19 oz can tomatoes, diced
- 1/2 tsp thyme
- 1 tsp salt
- 1/4 tsp pepper
- 1 1/2 to 2 cups chicken stock
- 1/2 lb cooked ham, cut into 2" x 1/2" strips
- 1 lb medium size shrimp
- 1 tsp finely chopped parsley
VEGGIE DIP (PATTI'S)

Blend and chill overnight
- 1 cup mayonnaise
- 1 cup sour cream
- 2 tbsp parsley, chopped
- 2 tbsp fresh dill, chopped
- 2 tsp Worcestershire
- 1/2 tsp garlic powder
- 1 tsp oregano
- 1 tsp thyme
LASAGNA (Ann Tonalato)

Make sauce of first 8 ingredients
- 1 lb hamburger
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup celery, finely chopped
- 1 carrot, finely chopped
- 19 oz tomato sauce
- 2 cans tomato paste
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp dill
- 1/2 cup white wine
- 2 cups Mozzarella cheese, grated
- 2 cups Cheddar cheese, grated
- 1 cup Parmesan cheese
- Lasagna noodles
- Bechamel sauce
TORTILLA ROLL-UPS WITH SUN-DRIED TOMATOES

Spread tortilla with cream cheese
- 1 tortilla
- Cream Cheese
- 1/4 cup sun-dried tomatoes (marinated in oil), drained and chopped
- 2 tbsp fresh basil, chopped
MIXED OLIVE CROSTINI

In a small bowl, combine the first six ingredients; stir in mozzarella cheese and parsley
- 1 can (4-1/4 ounces) chopped ripe olives
- 1/2 cup pimiento-stuffed olives, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, softened
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 3/4 cup shredded part-skim mozzarella cheese
- 1/4 cup minced fresh parsley
- 1 French bread baguette (10-1/2 ounces)
APPETIZER MEATBALLS

Combine hamburger, onion, potato, salt, pepper, thyme, ketchup and egg and blend thoroughly
- 2 lb extra lean hamburger
- 1 medium onion, finely chopped
- 1 small potato, grated
- 2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp thyme
- 2 tbsp tomato ketchup
- 1 egg, slightly beaten
- 1 (10 oz) can tomato soup
- 1 (19 oz) tomato sauce
- 2 tbsp lemon juice
- 6 tbsp brown sugar
- 1/4 to 1/2 cup basil, chopped
- salt & pepper to taste
LEMON CAKE MIX COOKIES

Preheat oven to 375F. In a medium bowl, cream butter with cream cheese
- 1/2 cup butter
- 8 oz package cream cheese
- 1 egg
- 1 tsp vanilla extract
- 1 standard size package of lemon cake mix
- 2 cups chocolate chips
LEMON TART WITH RASPBERRY SAUCE

Pastry: Preheat oven to 400F (200C)
- Pastry:
- 1 cup + 2 tbsp (280 mL) all-purpose flour
- 3 tbsp (45 mL) cornstarch
- 3 tbsp (45 mL) granulated sugar
- Pinch salt
- 1/2 cup (125 mL) cold butter cut into 1/2-inch (1.2 cm) cubes
- 3 tbsp (45 mL) ice water
- Filling:
- 3 eggs
- 3/4 cup (175 mL) granulated sugar
- 1 tbsp (15 mL) all-purpose flour Finely grated peel of 1 lemon
- 1/2 cup (125 mL) fresh lemon juice (about 3 lemons)
- 1/4 cup (50 mL) fresh lime juice (about 2 limes)
- Sauce:
- 1 300 g package frozen raspberries, thawed
- 2 tbsp (30 mL) icing sugar, or more to taste
- Garnish, mint sprigs or fresh raspberries
MARINATED BASIL & GARLIC PEPPERS WITH GOAT CHEESE ON CROSTINI

Heat the 2 tbsp (30 mL), of oil in a large skillet over high heat
- 2 tbsp (30 ml) plus 1/2 cup (125 ml) extra-virgin olive oil
- 2 red bell peppers, stemmed, seeded, and thinly sliced into 1/8-inch-thick strips
- 1 poblano pepper, stemmed, seeded, and thinly sliced into 1/8-inch-thick strips
- 1/2 tsp (2 ml) fine sea salt
- 1/2 cup (125 ml) white balsamic vinegar, white wine vinegar, or red wine vinegar
- 2 garlic cloves, thinly sliced
- 1/2 tsp (2 ml) sugar
- 1/8 tsp (0.5 ml) freshly ground black pepper
- 1/2 cup (125 ml) loosely packed basil leaves, finely sliced
- 6 large crostini
- 8 oz (225 g) fresh goat cheese or ricotta cheese
- flaked sea salt
- 1/4 cup toasted pine nuts (optional)
PINEAPPLE TIRAMISU

Whip the cheeses together until light in a mixer with a whip
- For Plating:
- 12 pineapple leaves, bright and fresh
- 4 tablespoons coconut, toasted
- Purees:
- 1 mango peeled
- 1/2 cup raspberries
- 4 guava inside scooped out
- 1 cup sugar
- 1/2 cup water
- Relish:
- 1/4 cup pineapple, diced 1/4”
- 1/4 cup strawberry, diced 1/4”
- 1/4 cup kiwi, diced 1/4”
- 8 mandarin oranges
- 2 tablespoons mint, rough chopped
- Tiramisu:
- 8 oz mascarpone cheese
- 4 oz cream cheese
- 2 cups whipped cream
- 1/2 cup pineapple, diced 1/4”
- 1 cup pineapple juice reduced by half
- 8 ” x 8 pound cake or genoise
- 2 cups pineapple juice
