CHICKEN NOODLE SOUP

In large saucepan, melt butter over medium heat; cook onion for 3 minutes or until softened
- 2 tablespoons (25 ml) butter
- 1/2 cup (125 ml) chopped onion
- 5 cups (1.2 ml) chicken stock
- 1 1/2 cups (375 ml) thickly sliced carrots
- 1 cup (250 ml) sliced celery
- 1 cup (250 ml) cubed cooked chicken
- 1 cup (250 ml) egg noodles
- 2 sprigs fresh dill
- 1/2 cup (125 ml) frozen peas
- Salt and pepper
LEEK & CAULIFLOWER SOUP WITH COOL GREEK YOGURT

Heat the olive oil and butter in a large pot over medium heat
- 2 tbsp extra-virgin olive oil
- 2 tbsp unsalted butter
- 3 large leeks, white and light green part only, sliced into 1/4" rounds, plus more for garnish
- 1 medium head cauliflower, cut into small florets
- 2 medium carrots, sliced
- 2 potatoes, cut into 1" chunks
- 1 clove garlic, chopped
- 6 cups chicken stock
- 1 cup condensed milk
- 1/2 cup feta cheese, crumbled into small pieces
- Salt and freshly ground black pepper to taste
- 1 cup Greek yogurt
- 2 1/2 tsp curry powder
STRAWBERRY PIE (MOM)

In medium saucepan, combine marshmallows and butter
- 3 cups marshmallows
- 2 tbsp buter
- 1/2 tsp vanilla
- 4 cups Rice Krispies
- 2 cups whipping cream, whipped
- Stabilizer for whipping cream
- 3 , 1 oz squares white chocolate
- 1/2 tsp vanilla
- 3 cups sliced strawberries
ROAST BEEF (Eileen)

Preheat oven to 400F. Combine flour, dry mustard and garlic salt and rub on top of roast
- Beef sirloin trip roast
- Flour
- Dry mustard
- Garlic salt
CEVICHE-STYLE SHRIMP & AVOCADO TACOS

Finely grate rind from limes to measure 1 tablespoon; juice limes to measure 1/4 cup
- 3 limes
- 1 cup chopped seeded tomato
- 1 cup diced peeled avocado (about 1 avocado)
- 1/2 cup chopped fresh cilantro
- 3/4 tsp salt
- 1/4 tsp black pepper
- 3 garlic cloves, minced
- 1 lb cooked, peeled medium shrimp
- 12 (6-inch) corn tortillas
SPINACH & CHEESE SPREAD WITH ALMONDS

Process spinach, oil and garlic in food processor until well blended
- 1 cup tightly packed baby spinach leaves
- 2 tablespoons olive oil
- 1 clove garlic
- 1 8-ounce package cream cheese, softened
- 1 8-ounce package shredded Italian cheese blend
- 2 tablespoons grated Parmesan cheese
- 1/3 cup sliced almonds. toasted
- Ritz crackers
10 CUP COOKIES

Cream butter with sugars. Mix rest of ingredients together
- cup each of:
- White sugar
- Brown sugar
- Butter
- Flour
- Rolled Oats
- Chocolate chips
- Chopped walnuts
- Coconut
- Raisins
- Peanut butter
- 3 eggs
- 1 tsp vanilla
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
LEMON CHIFFON PIE WITH GINGERSNAP CRUST

Crust: Position rack in center of oven and preheat to 350F
- Crust:
- 1 1/4 cups finely ground gingersnap cookie crumbs (about 25 cookies)
- 2 tbsp sugar
- 1 tsp minced crystallized ginger
- 5 tbsp unsalted butter, melted
- Filling:
- 2 cups ice cubes
- 1/4 cup water
- 1 envelope unflavored gelatin
- 3/4 cup plus 2 tbsp sugar
- 3/4 cup strained fresh lemon juice
- 4 large egg yolks
- f2 tsp finely grated lemon peel
- 1/8 tsp fine sea salt
- 1 1/4 cups chilled whipping cream
- 1/4 cup icing sugar
- Lemon peel strips from 1 lemon, removed with citrus zester
MAPLE GLAZE

In a bowl, thoroughly combine all ingredients
- 1/4 cup maple syrup
- 1 tbsp ketchup
- 1 tbsp soy sauce

- 2 cups flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/4 cup butter
- 1 cup milk
- 1 cup grated sharp Cheddar cheese
- 1 tbsp parsley flakes
- 2 tbsp freshly chopped dill
- 1 tsp garlic powder
