- 1/4 cup finely chopped red pepper
- 1 tbsp chopped jalapeno pepper
- 1 small minced garlic clove
- 1/4 cup finely chopped and seeded tomato
- 1/2 tsp olive oil
- 2 tbsp chopped basil
- Freshly ground black pepper
HASSELBACK POTATOES

Pare potatoes, score in slices 1/4" wide and 2/3 of the way down, not through
- 4 new potatoes
- 1/4 cup butter, melted
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp bread crumbs
- 2 tbsp Parmesan cheese
SMOKED SALMON PATE

In a food processor, process cream cheese and butter until smooth
- 4 oz cream cheese, softended
- 2 tbsp butter, softened
- 1 pkg (85 g) frozen smoked salmon, thawed
- 1 tsp fresh lemon juice
- 1/2 tsp prepared horseradish
- 1 tsp fresh dill
- 1/4 tsp freshly ground pepper
SEVEN GRAIN BREAD

Combine cereal and boiling water in a bowl, mix and set aside for 20 minutes
- 1 cup unsweetened multigrain cereal, like Bob's Red Mill 7-Grain
- 1 cup boiling water
- 1 8-g pkg active dry yeast
- 1/2 cup orange juice, tepid
- 1 tbsp quality honey
- 1 cup whole wheat flour
- 1 1/2 cups all purpose flour
- 1 tsp salt
- 1/4 cup unsalted butter, melted
- 1 tsp sesame seeds, plus a little extra for garnish
- 1 white from a large egg, beaten
BOILED RAISIN COOKIES

Boil raisins in water until 1 cup of liquid remains
- 2 cups raisins
- 2 1/2 cups water
- 1 1/2 cups sugar
- 1/2 tsp cloves
- 3 eggs
- 1 tsp cinnamon
- 3 1/2 cups flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
SALMON DIJON

Preheat oven to 400 degrees F (200 decrees C)
- 4 (4 ounce) fillets salmon
- 3 tablespoons prepared Dijon-style mustard
- 1/4 cup Italian-style dry bread crumbs
- 1/4 cup butter, melted
- Salt and pepper to taste
SESAME MARINADE (for pork)

Combine all ingredients; whisk briskly before use
- 1 cup (250 mL) dry white wine
- 3/4 cup (175 mL) red wine vinegar
- 1/4 cup (50 mL) dark sesame oil
- 1/2 cup (125 mL) olive oil
- 2 cloves garlic
- 3 tablespoons (50 mL) chopped fresh ginger
- 2 teaspoons (10 mL) fresh thyme
LEMON POPPY SEED LOAF

Preheat oven to 350F. Grease and flour a loaf pan; set aside
- For syrup:
- 1 to 2 large Meyer lemons
- 1/2 cup granulated sugar
- For loaf:
- 1 1/4 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 6 1/2 tbsp unsalted butter, softened
- 1 cup sugar
- 1 tsp fresh lemon zest
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp poppy seeds
- Fresh blueberries
CELERY & MUSHROOM MEDLEY

Simmer celery in chicken broth until tender, drain
- 3 cups sliced celery (in crescents)
- 1 cup chicken broth
- 3 oz sliced mushrooms
- 4 tbsp butter
- Black pepper
- 1 tsp soya sauce
- 1/2 cup slivered almonds
BAKED JALAPENO CRAB DIP

In a bowl, combine crab, cheese, onions, jalapeño to taste, sour cream, mayonnaise, lemon juice and cilantro
- 1 cup cooked drained crabmeat
- 1 cup shredded Monterrey Jack cheese
- 2 green onions, white part with a bit of green, minced
- 1/2 to 1 jalapeño pepper, minced
- 3 tbsp each full-fat sour cream and mayonnaise
- 2 tbsp freshly squeezed lemon juice
- 1 finely chopped cilantro leaves
- Salt and freshly grounf pepper
