FRENCH TOAST (Mom)

Mix all ingredients together, except bread
- 2 eggs, beaten
- 1 tbsp sugar
- 1/4 tsp salt
- 1/2 cup whole milk
- 1/2 tsp vanilla
- 6 slices of French bread
SUMMERTIME PASTA - ANYTIME

While pasta is cooking, toast the nuts and prepare the other ingredients
- 1 pkg (500 g) Misura brand whole grain spaghetti (available at Italian shops)
- 1/2 cup (125mL) pine nuts, toasted
- 1 wedge (150 to 200 g) Gorgonzola or Cambozola cheese, rind removed, and chopped into large chunks
- 3/4 cup (125 mL) basil leaves, roughly chopped
- 5 or 6 medium sized ripe tomatoes, chopped
MINI PAVLOVAS WITH LIME CURD SPREAD

Pavlovas: Preheat the oven to 100 C (200 F)
- Pavlovas:
- 3 egg whites
- 1 pinch cream of tartar
- 3/4 cup ((180 ml) icing sugar
- Lime Curd Spread:
- 4 large limes
- 1/2 cup unsalted butter
- 1 1/2 cups sugar
- 3 egg yolks
- 1 egg
- Filling:
- Whipped cream
- Lime Curd Spread
- Fresh Fruit (raspberries, blueberries, strawberries, etc.)
CHIVE & PARSLEY MASHED POTATOES

Make oil: Puree chives and parsley with oil and salt in a blender until smooth
- For chive and parsley oil:
- l cup chopped fresh chives
- 3/4 cup chopped fresh flat-leaf parsley
- 1/2 cup plus 3 tablespoons olive oil
- 1/4 teaspoon salt
- For mashed potatoes:
- 5 lb yellow-fleshed potatoes such as Yukon Gold
- 1 1/2 cups milk
- 1 stick (1/2 cup) unsalted butter, cut into tablespoon pieces
- 1 1/4 teaspoons salt
- 3/4 teaspoon black pepper
CHOCOLATE MOUSSE WITH GRAND MARNIER

Process chips in food processor for 5 seconds
- 2 cups chocolate chips
- 1/3 cup boiling water
- 5 egg yolks
- 5 egg whites
- 4 tbsp soft butter
- 3 tbsp Grand Marnier
CREAM PUFFS (Mom)

Put butter and water in a pan
- 1/2 cup butter
- 1 cup water
- 1 cup flour
- 4 eggs
- 1/8 tsp salt
ROASTED CAULIFLOWER WITH GINGER & MINT

Preheat oven to 375 degrees
- 1 head (about 2 pounds) cauliflower, cut into small florets
- 2 cloves garlic, minced
- 1 tablespoon peeled fresh ginger, minced
- 1/2 teaspoon coarse salt
- 1 tablespoon plus 2 teaspoons extra-virgin olive oil
- Freshly ground pepper
- 2 tablespoons fresh mint, coarsely chopped
- 1 tablespoon fresh lime juice
CHINESE CHICKEN WITH PLUM SAUCE

Place chicken in 9 x 13 inch (3
- 4 chicken breast halves (2 whole) or 8 chicken thighs, skinned
- 1 cup (250 mL) Oriental plum sauce (hot or mild - see note below)
- 1/2 cup (125 mL) minced onion
- 2 tablespoons (25 mL) lemon juice
- 1 tablespoon (15 mL) soy sauce
- 1 teaspoon (5 mL) grated lemon rind
- 1/2 teaspoon (2 mL) each, dry mustard and ground ginger
- 1/4 teaspoon (1 mL) each, pepper and liquid hot pepper seasoning
- 1/4 teaspoon (1 mL) anise seed, crushed (optional but good)
WASABI SALMON SPREAD

Place salmon on parchment paper-lined baking sheet; sprinkle with salt
- 225 g skinless salmon fillets
- Pinch salt
- Half pkg (250 g pkg) cream cheese, softened
- 1/2 cup sour cream
- 2 green onions, thinly sliced
- 1 tbsp lemon juice
- 2 tsp sesame oil
- 3/4 tsp wasabi paste
- 1/2 tsp sodium-reduced soy sauce
- 1/4 tsp sriracha
BLUEBERRY CORN MUFFINS

Preheat oven to 400F. Grease 12 muffin tins
- 1 cup cornmeal
- 1 cup unbleached flour
- 1/3 cup sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup buttermilk
- 6 tbsp unsalted butter, melted
- 1 egg, slightly beaten
- 1 2/3 cups blueberries
