SALAD WITH AVOCADO-LIME VINAIGRETTE & SPICY PUMPKIN SEEDS

Vinaigrette: Combine all ingredients in blender and blend until smooth
- Vinaigrette:
- 9 tablespoons olive oil
- 1/2 cup diced peeled seeded avocado
- 1/2 cup chopped fresh cilantro
- 1/4 cup fresh lime juice
- 1/4 cup unsalted shelled raw pumpkin seeds (pepitas), toasted
- 3 tablespoons distilled white vinegar
- 1 garlic clove
- 3/4 teaspoon minced seeded serrano chile
- SALAD:
- 1 5-ounce package mixed baby greens
- 2 avocados, halved, seeded, peeled, sliced
- 1 12-ounce container cherry tomatoes, halved
- 1 medium cucumber, peeled, seeded, diced
- 1 medium jicama, peeled, cut into 1/3-inch-thick slices, then 1/2-inch sticks
- 1/2 medium red onion, very thinly sliced
- 1 1/2 cups coarsely crumbled cotija cheese or feta cheese (about 7 ounces)

GREEN SALAD WITH KALAMATA OLIVES & LEMON VINAIGRETTE

In a large bowl, toss together lettuce, olives and green onions
- Salad:
- 1 medium head Boston lettuce
- 1/2 cup pitted Kalamata olives
- 2 green onions, thinly sliced
- Salt & freshly ground pepper
- Vinaigrette:
- 1/4 cup fresh lemon juice (from about 2 lemons)
- 1/4 cup white-wine vinegar
- 2 teaspoons sugar
- 1 teaspoon coarse salt
- 1/3 teaspoon ground pepper
- 1 cup olive oil
PINEAPPLE THAI RICE

In saucepan, cook rice in 2 cups (500 mL) boiling water for 20 minutes or until tender
- 1 cup long-grain rice 250 mL
- 2 tbsp chopped fresh coriander 25 mL
- 1 tbsp soy sauce 15 mL
- 1 tbsp fish sauce 15 mL
- 1 tbsp rice wine vinegar 15 mL
- 1 tsp granulated sugar 5 mL
- 1/2 tsp chili paste or dash hot pepper sauce 2 mL
- 1 tsp vegetable oil 5 mL
- 1 onion, slivered 1
- 1 clove garlic, minced 1
- 1 cup snow peas, halved 250 mL
- 1 cup bean sprouts 250 mL
- 1 cup Pineapple pieces 250 mL
- 1/4 cup Shredded carrots 50 mL
- 2 tbsp Chopped green onion 25 mL
- 1/4 cup Chopped cashews 50 mL
- 2 tbsp Lime juice 25 mL

- 1 (1 1/2-pound) lean flank steak
- 1/3 cup fresh lime juice
- 1/4 cup minced fresh mint
- 1/4 cup low-sodium soy sauce
- 2 tablespoons minced peeled ginger-root
- 2 tablespoons minced seeded jalapeño pepper
- 3 garlic cloves, minced
- Vegetable cooking spray
- 1 1/2 pounds green beans, trimmed
- 1 cup halved cherry tomatoes
SESAME STIR-FRIED BEEF

Trim fat and slice steak across the grain into strips about 2 inches (5 cm) long and 1/8 inch (3 mm) wide
- 1 lb (500g) beef sirloin grilling steak
- 4 green onions
- 2 tsp (10mL) vegetable oil
- 1 clove garlic, minced
- Pinch each pepper and hot pepper flakes
- 1/4 cup (50mL) soy sauce
- 1/4 cup (50mL) dry sherry or beef stock
- 4 tsp (20mL) granulated sugar
- 1 tbsp (15mL) toasted sesame seeds
- 1 tbsp (15mL) cornstarch
- 1 tbsp (15mL) water
POTATO GRATIN WITH THYME

Combine ingredients in large saucepan
- 6 cups thinly sliced peeled baking potatoes
- 1 1/4 cups whipping cream
- 1 1/4 cups homo milk
- 1/2 cup chopped green onions
- 2 tbsp butter
- 1 tsp salt
- 3/4 tsp thyme, crumbled
- 1/2 tsp freshly ground pepper
YORKSHIRE PUDDING (Karen Borno)

Preheat oven to 425 oF. Place in the blender the eggs
- 1 cup room temperature 2% milk
- 1 cup white flour
- 1/2 tsp salt
- 4 eggs room temperature
- NOTE: To make 6 popovers, use 6 eggs
APPLE WALDORF JELLO SALAD

Dissolve jello in boiling water, then add cold water and chill until slightly thick
- 1 pkg lime jello
- 1 cup boiling water
- 1/2 cup cold water
- 1 1/2 cups diced apples (peel on)
- 1/4 cup diced celery
- 1/4 cup chopped walnuts or pecans
- 1 cup miniature marshmallows
- 1/4 cup mayonnaise
- 3/4 cup whipping cream, whipped
GINGER APPLE CHICKEN STIR-FRY

In a non-stick skillet or wok, heat sesame oil
- 2 tsp sesame oil
- 1 clove garlic, minced
- 2 tbsp minced fresh ginger
- 1 lb boneless, skinless chicken breasts, cut into strips
- 6 oz pea pods
- 10 mushrooms, sliced
- 1/4 tsp pepper
- 1/3 cup unsweetened applesauce
- 2 tbsp apple cider vinegar
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1/3 cup chicken broth or water
CRANBERRY PAVLOVA

For meringue: Preheat oven to 225°F
- For meringue:
- 6 egg whites, at room temperature
- 1 tsp cream of tartar
- 1/4 tsp salt
- 1-1/2 cups sugar
- 1 tsp cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp ground nutmeg
- For cranberry compote:
- 2 cups raw whole cranberries
- 4 tbsp orange juice
- finely grated zest of half an orange
- 1 cup brown sugar
- 1/2 tsp vanilla extract
- For topping:
- 1 cup whipping cream
- 1 tbsp sugar
