ROASTED SWEET POTATO WEDGES

Scrub 4 sweet potatoes (3 lb/1
- 4 sweet potatoes (3 lb/1.5 kg)
- 2 tbsp (25 mL) vegetable oil
- 1/2 tsp (2 mL) each salt and pepper
CHOCOLATE SCOTCHEROOS

Combine sugar and syrup in large pot
- 1 cup sugar
- 1 cup corn syrup
- 1 cup peanut butter
- 6 cups Rice Krispies
- 1/2 cup semi-sweet chocolate chips
WARM SPINACH & BASIL SALAD

Combine the spinach and basil in a large salad bowl
- 6 cups spinach leaves
- 2 cups fresh basil
- 1/2 cup olive oil
- 2 cloves of garlic, minced
- 1/2 cup pine nuts
- 4 ounces prosciutto, chopped
- Salt and pepper to taste
- 3/4 cup grated Parmesan cheese
WATERMELON SALAD

Place 2 cups of watermelon on each plate
- 1/2 medium-size watermelon, chilled, cut into cubes to make 8 cups
- 1/4 cup fresh mint leaves, finely chopped
- 4 tsp chives, finely chopped
- 1/2 cup feta, crumbled
- 2 tbsp glazed balsamic vinegar
- Cracked pepper to taste
BBQ SIRLOIN TIP ROAST WITH BURGUNDY SHALLOT SAUCE

Marinate beef for 8 hours or overnight, turning several times
- Marinade:
- 4 lb sirloin tip roast
- 1/2 cup olive oil
- 1/2 to 1 cup Burgundy wine
- 1/2 cup soy sauce
- 1 cup BBQ sauce
- 1 tsp Maggi's flavoring
- 1/4 tsp thyme
- 2 cloves garlic minced
- 1/4 cup chopped onion or shallots
GRILLED PINEAPPLE SKEWERS WITH HONEY-LIME YOGURT DIP

In bowl, whisk together lime juice, honey and salt
- Honey-Lime Yogurt Dip:
- 2 tbsp lime juice
- 2 tsp liquid honey
- Pinch salt
- 1 pineapple, peeled, cored and cut lengthwise into 8 wedges
- 1 tbsp chopped fresh mint
- 1 cup 2% plain Greek yogurt
- 2 tbsp liquid honey
- 1 tsp grated lime zest
- 4 tsp lime juice
PISTACHIO & ORANGE COOKIES

Preheat oven to 350F (180C)
- 1/2 cup salted shelled pistachios
- 1 orange
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt, optional
- 2/3 cup unsalted butter, at room temperature
- 1 1/4 cups granulated sugar
- 2 eggs
- 2 tsp vanilla
CHOCOLATE MOUSSE

Melt chocolate by placing it in a covered pot on top of a larger pot of barely simmering water, double-boiler style
- 8 oz bittersweet chocolate, coarsely chopped
- 6 eggs, separated
- 3 tbsp water
- 2 cups whipping cream, well chilled
- 6 tbsp sugar
- Whipped cream, grated semi-sweet chocolate and toasted almonds or hazelnuts for garnish
CABBAGE ROLLS

Remove cabbage core and immerse whole in boiling water
- 1 medium cabbage
- 2 tbsp bacon fat
- 1 tsp salt
- 1 tsp pepper
- 1 clove garlic
- 1 onion, finely chopped
- 1 lb ground beef
- 3/4 cup uncooked rice
- 2 tsp paprika
- 1 1/2 cups tomato juice or tomato sauce
- 1 1/2 cups water
SWEET POTATOES WITH ORANGE-MINT GREMOLATA

Heat the oil and butter in a 12" skillet over medium-low heat
- 3 tbsp olive oil
- 3 tbsp unsalted butter
- 1 1/2 lb sweet potatoes, peeled and cut into 1/2" dice (about 5 cups)
- Kosher salt and freshly ground black pepper
- 2 tbsp coarsely chopped toasted pecans
- 3 tbsp lightly packed, coarsely chopped fresh mint
- 1 small clove garlic, coarsely chopped
- 2 tsp lightly packed, finely grated orange zest
