ROASTED EGGPLANT TORTE

Toast pine nuts and set aside
- Topping:
- 1/4 cup pine nuts
- 2 tbsp sun-dried tomatoes, packed in olive oil (can use the dried ones and re-constitute them in boiling water, drain and add a little olive oil
- 2 tbsp pickled banana peppers (not hot)
- 2 tbsp marinated artichoke hearts
- 1 large or 2 small eggplants
- 250 grams cream cheese
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Sun-dried tomatoes, peppers, artichokes and pine nuts
OATMEAL FAVORITES

Cream butter and sugar. Add eggs and mix well
- 1 cup butter
- 1 cup white sugar
- 2 eggs, separated
- 2 cups flour
- 2 cups oatmeal
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 cup raisins
- 1 cup walnuts

GRILLED QUESO FRESCO WITH CARMELIZED FENNEL

Cheese: Preheat oven to 500F
- 1 tbsp melted butter
- 1 tbsp honey
- 1 tbsp chives
- Salt and freshly ground pepper
- 1 fennel bulb, sliced
- 1 cup Queso Fresco Cheese, cut into cubes
BROCCOLI, PEANUT & CHERRY SALAD

In a large pot, bring 4 quarts water and 2 tsp salt to a boil
- 2 tsp, plus 1/4 tsp Kosher salt, divided
- 6 cups small broccoli florets (from 1 large head)
- 1/2 cup sour cream
- 1 tbsp white wine vinegar
- 2 tbsp fresh orange juice
- 1/4 tsp freshly ground black pepper
- 1/4 cup roughly chopped dried cherries
- 1/3 cup roughly chopped roasted, salted peanuts
SAUSAGE STUFFED JALAPENOS

Preheat oven to 425F. Place sausage in a skillet over medium heat, and cook until evenly brown
- 1 lb pork sausage (or use Spolumbo's Hot Italian and Mild Italian mixture)
- 1 , 8 oz package cream cheese, softened
- 1 cup shredded Parmesan cheese
- 1 lb large fresh jalapeno peppers, halved lengthwise and seeded
- 1 , 8 oz bottle Ranch dressing
CHEWY CHOCOLATE CHIP COOKIES

With the rack in the middle position, heat oven to 375F
- 1 1/2 cups up bleached flour
- 1/2 tsp baking soda
- Pinch of salt
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar
- 2 tbsp sugar
- 1 egg
- 1 egg yolk
- 7 oz milk or dark chocolate, coarsely chopped

- Tomato Meat Sauce:
- 12 lasagna noodles
- 1 tub extra-smooth ricotta cheese
- 1 cup grated Parmesan cheese
- 1 egg
- 1/2 cup chopped fresh basil
- 1 clove garlic, minced
- 1/4 tsp each salt and pepper
- 4 1/2 cups shredded Mozzarella cheese
- 2 tbsp olive oil
- 2 onions, diced
- 1 rib celery, diced
- 1 carrot, diced
- 2 cloves garlic, minced
- 2 cans tomato paste (each 156 mL)
- 675 g lean ground beef
- 2 cans diced tomatoes (each 796 mL), diced
- 1 cup red or white wine
- 2 bay leaves
- 2 tsp dried oregano
- 1 tsp salt
- 3/4 tsp pepper
SAUCY SHIRAZ SHEPHERD'S PIE

Cover potatoes and cauliflower with cold water in a large pot and set over high
- Topping:
- 1/2 lb Yukon Gold potatoes, peeled and cut into 1/2" pieces
- 1/2 small cauliflower, cut into florets, about 1 1/2 cups
- 2 tbsp unsalted butter
- 1 tbsp 18% cream
- 1 tbsp grainy mustard
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- Filling:
- 1 lb lean ground beef or lamb
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 carrot, diced small
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1/3 cup shiraz
- 2 tbsp flour
- 1 cup no-salt beef broth
- 2 tbsp tomato paste
- 2 tsp fresh rosemary, chopped
- 1 tsp Worcestershire sauce
- 1/4 cup grated parmesan
GRILLED ASPARAGUS WITH LEMON & GARLIC

Trim asparagus to even lengths, then peel from just below the flowered tip
- 1-1/2 pounds thick speared asparagus
- 2 medium cloves of garlic, peeled and minced
- 1/2 teaspoon Dijon mustard
- Zest and juice of 1 lemon
- 3 tablespoons olive oil (lemon flavored if you have it)
- Salt and freshly ground black pepper
FROZEN LEMON MOUSSE

Cook egg yolks, sugar, grated lemon rind and lemon juice for three minutes, stirring constantly
- 4 eggs, separated
- 1-1/2 cups sugar
- Grated rind of 2 lemons
- Juice of 3 lemons
- 2 (6-ounce) cans evaporated milk, chilled
