Pumpkin Corn Soup

In a large saucepan, saute onion and red pepper in butter until almost tender
- 1 large onion, chopped
- 1 medium sweet red pepper, chopped
- 2 tablespoons butter
- 2 cups fresh or frozen corn, thawed
- 1 jalapeno pepper, seeded and chopped
- 2 garlic cloves, minced
- 2 teaspoons chili powder
- 2 cans (14-1/2 ounces each) vegetable broth
- 1 can (15 ounces) solid-pack pumpkin
- 1/2 teaspoon salt
- Dash cayenne pepper
- 2 tablespoons lime juice
Bean Relish

In large bowl, combine beans and corn with its liquid; set aside
- 3 (15 1/2 oz) red kidney beans, drained
- 2 12oz whole kernel corn
- 1 1/2 C. cider vinegar
- 1 C. sugar
- 3 medium sized onions, sliced
- 2 t. mustard seeds
- 1 t. cracked black pepper
- 3 T. cornstarch
International Vegetable Soup

In Dutch oven or large slow cooker; combine everything
- 1 15oz can black beans, rinsed and drained
- 1 15oz can pinto beans, rinsed and drained
- 2 14 1/2oz cans Mexican style diced tomatoes with juice
- 2 C. frozen or canned corn, drained
- 1 14 1/2oz can vegetable broth
- 2 medium chopped red potatoes
- 1 C. frozen chopped onions
- 1 C. medium salsa
- 1 C. frozen green beans

1. Stir together 1/2 cup KELLOGG'S ALL-BRAN ORIGINAL cereal and sour cream; set aside

- 1 cup granulated sugar
- 2 eggs
- 1 3/4 cups fresh or frozen cranberries, divided
- 1 teaspoon grated lemon peel
- 1/3 cup packed brown sugar

- 5 c. fresh blackberries (about 1 3/4 lbs)

- 2 T. flour
- 1 t. lemon zest
- 1 T. fresh lemon juice

- 1 c. flour
- 1/2 t. B.P.

- 1/2 c. plain nonfat yogurt
