Multigrain Bread

- 1 1/4 cup seven-grain (5-grain or 12)hot cereal mix
- 2 1/2 cups boiling water
- 3 cups all-purpose flour (not bread flour)
- 1 1/2 cups whole wheat flour
- 1/4 cup honey
- 4 tablespoons unsalted butter, melted and cooled
- 2 1/2 teaspoons instant or rapid-rise yeast
- 1 tablespoon salt
- 1/2 cup (1 1/2 oz) old-fashioned rolled oats or quick oats
- If you’re using salted butter, just decrease the additional salt by just a bit.
CRAB CAKES

1. Pick the crab meat over to remove excess shells and cartilage
- 1 lb. jumbo lump crab meat
- 1/3 cup mayonnaise
- 1 tblsp water
- 2 tsp Old Bay seasoning
- 1 tblsp Dijon mustard
- 1 tblsp chopped parsley
- 4 saltine crackers
Beef Barbacoa in Slow Cooker

One of my best slow cooker recipes
- 2-3 pounds boneless beef roast (shoulder, rump, chuck eye, top or bottom round, brisket)
- Salt & freshly ground black pepper
- 6 large cloves garlic
- 1/2 cup packed cilantro leaves
- 1 to 4 chipotle peppers in adobo, plus 1 to 2 tablespoons reserved sauce
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon tomato paste
- 1 tablespoon cumin
- 2 teaspoons chili powder
- 2 teaspoons garlic salt
- 1 teaspoon dried oregano
- 1 bay leaf
- 6 ounces beef broth
- 8 ounces Mexican beer (leaves one good slug for the cook)

Fresh Mexican Salsa
- 1 medium tomato, diced
- 1 onion, finely chopped
- 1 fresh jalapeno pepper, seeded and chopped
- 2 sprigs fresh cilantro, finely chopped (or you can use fresh Italian parsley)
- 1 green onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
- 1 fresh lime squeezed or small lemon

Quick and easy homemade French Baguette recipe
- 2 envelopes dry active yeast (1 1/2 tablespoons)
- 1 1/2 tablespoon barley malt (I use powder but you can use liquid)
- 1/2 tablespoons honey (just eyeball a squirt)
- 3 1/2 to 4 cups all-purpose flour, plus more for dusting
- 2 teaspoons salt
- oil, for greasing bowl
- Cornmeal, for dusting pan (I put parchment paper down on 1/2 sheet pan and skip cornmeal)

Jambalaya-Instant Pot

Very good and easy dinner
- 1 tablespoon oil
- 12 ounces andouille sausage cut into 1/2 inch slices, Andouille is a spicy smoked Cajun sausage. If you don't have access to it, substitute it with a Spanish chorizo or kielbasa.
- 12 ounces chicken thighs boneless, skinless, cut into 1 inch pieces
- 1 pound Shrimp peeled and deveined
- 1 cup onion chopped
- 1 cup bell pepper chopped
- 1 cup celery chopped
- 1 tablespoon garlic minced
- 1 teaspoon dried thyme
- 1 tablespoon Cajun seasoning or to taste
- 1/2 teaspoon salt or to taste, Quantity of salt will depend on your Cajun seasoning. If it's more salty, go easy on the extra salt.
- 1 1/2 cups long grain white rice
- 1 can diced tomatoes with liquid, 14.5-ounce can
- 1 teaspoon Worcestershire sauce
- 2 cups chicken broth
- 2 small bay leaves or 1 large
- parsley chopped, to garnish

- 1 oz ready salted potato chips (I like kettle)
- 1 Tbl malt powder
- 1 Tbl caster sugar (I just put sugar in food processor to make fine granules NOT powder sugar)
- 2 Tbl unsalted or salted butter, melted
- Cookie dough:
- 1 C unsalted or salted butter (if salted use 1/2 the salt called out below)
- 1 C soft light brown sugar
- 3.5 oz caster sugar (hair under 1/2 cup)
- 2 medium eggs
- 1/2 tsp vanilla extract
- 14 oz plain flour (3 1/3 cups)
- 1 tsp salt
- 1/2 tsp baking powder
- 1 tsp bicarbonate of soda
- 7 oz white and milk chocolate chips
