Ingredients

  • Crunch:
  • 2 oz corn flakes
  • 1 oz ready salted potato chips (I like kettle)
  • 1 Tbl malt powder
  • 1 Tbl caster sugar (I just put sugar in food processor to make fine granules NOT powder sugar)
  • 2 Tbl unsalted or salted butter, melted
  • Cookie dough:
  • 1 C unsalted or salted butter (if salted use 1/2 the salt called out below)
  • 1 C soft light brown sugar
  • 3.5 oz caster sugar (hair under 1/2 cup)
  • 2 medium eggs
  • 1/2 tsp vanilla extract
  • 14 oz plain flour (3 1/3 cups)
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 7 oz white and milk chocolate chips
  • 3 oz little marshmallows, frozen

1. In a large bowl, combine corn flakes, potato chips, malt powder, sugar and melted butter and stir to crush together into smaller pieces. Spread out the mixture onto a baking tray lined with baking paper and place in a preheated oven at 350ºF for 10-12 minutes to make a crunch.

2. In a separate bowl beat together the two sugars with the butter for a good 5 minutes until paler in color and creamy. Beat in the egg and vanilla extract.

3. Sift over the flour, salt, baking powder and bicarbonate of soda and beat until evenly combined.

4. Fold in the chocolate chips and cooled crunch and mix until combined. Place in fridge until firm and chilled. Evenly divide the dough and add 3 frozen marshmallows to the center of each cookie. Close over the cookie dough and roll into a ball. Flatten the tops slightly (like a mini hockey puck).

5. Bake at 350ºF for 8-13 minutes depending on the size. Don’t over bake!
