Healthy Stuffed Chicken

Preheat the oven to 375 degrees
- 2 boneless, skinless chicken breasts, flattened
- Stuffing
- 3/4 pound low-fat feta cheese, crumbled
- 1/2 cup packed, chopped baby spinach
- 1/2 cup fresh chopped parsley
- 1 teaspoon minced garlic
- 1 teaspoon olive oil
- 1 teaspoon ground black pepper
- Sauce
- One 14-ounce can tomato sauce
- 1 diced mango, peeled and seeded
- 1/4 teaspoon seeded and diced jalapeno peppers
- Salt and pepper, to taste
Pumpkin Potato Corn Chowder

In a large sauce pan, saute the butter and onion until soft
- Ingredients
- 2 Tbsp. butter
- 1/2 c. chopped onion
- 2 cans pumpin puree (15 oz. each)
- 6 c. chicken broth
- 1 c. milk
- 1 Tbsp. pepper
- 1 (15 oz.) can corn, drained
- 2 c. cooked potato, cubed
- 1/2 c. macaroni noodles, cooked and drained
- 2 c. smoked sausage, sliced (9 oz. pkg.)
Eclair Dessert

- 2 small packages instant vanilla pudding
- 3 cups milk
- 1 package of chocolate frosting (or make your own)
- 8 oz. cool whip
- 1 box of graham crackers
Fall Vegetable Chili

- 1 tablespoon(s) olive oil
- 2 medium carrots, peeled and cut into 1/2-inch pieces
- 2 medium parsnips, peeled and cut into 1/2-inch pieces
- 1 medium onion, chopped
- 2 can(s) (15 to 19 ounces each) red kidney beans, rinsed and drained
- 4 teaspoon(s) chili powder
- 1 can(s) (28-ounce) whole tomatoes in juice
- 1/4 cup(s) (loosely packed) fresh cilantro leaves, chopped
Poppy Seed Cake

A favorite cake of Pa's.
- Cake:
- 1 pkg yellow cake mix (white works too)
- small package French Vanilla instant pudding (you can substitute regular vanilla)
- 1/4 cup poppy seeds
- 4 eggs
- 1 cup water
- 1/2 cup oil
- 2 T Lemon juice
- Glaze:
- 1 cup powdered sugar
- 3 T lemon juice
The Perfect Cupcake (using a mix)

You can use this "trick" to box cake mix taste like "from scratch"
- 1 box mix (any flavor) - but get the good kind, Duncan Hines or Betty Crocker
- 3 Large Eggs
- 1/2 cup butter, melted (use butter not margarine....trust me on this!)

In a bowl, combine the vinegar, oil, chives, sugar, salt and cayenne; whisk in cream until well combined
- VINAIGRETTE:
- 1/4 cup white wine vinegar
- 1/4 cup olive oil
- 2 tablespoons minced chives
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/2 cup half-and-half cream
- SALAD:
- 1 tablespoon butter
- 1 cup pecan halves
- 1 tablespoon sugar
- 2 medium pears, thinly sliced
- 2 cups torn leaf lettuce
