Mini Bacon & Cheese Frittatas

Mini frittatas are great for a holiday breakfast or an appetizer. These are kid friendly too.

Ingredients

  • 6 eggs
  • 1 cup low fat cheese
  • 6 slices bacon cooked

Preparation

Step 1

Preheat oven 350 degrees
Beat eggs and mix in cheese
Pour your egg mixture into a muffin tin
Crumble or cut bacon on top of frittatas
Cook for 20 minutes
Reheat
Place in oven at 350 degrees for 30 minutes. If you have them in two layers like I do in the Handi Foil pan at 15 minutes quickly separate the squares and make sure the cold sides are on the bottom and top of the pan.
