Crockpot 10 bean soup

Use a 6 quart or larger slow cooker
- 1 pound assorted dried beans (I used small red, lima, northern, black-eyed peas, split peas, pinto)
- 2 cans (25-30 ounces approx) diced tomatoes (whatever you have on hand---flavored, Rotel, etc.)
- 3 tablespoons dried minced onion flakes
- 1 tablespoon dried parsley
- 1 tablespoon garlic powder
- 1 tablespoon celery seed (or chop up a bunch of celery if you already have it in the house)
- 1 teaspoon seasoned salt
- 1 teaspoon paprika
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 4 cups broth
- 4 cups water
Sugar Saucers

Preheat the oven to 350˚ F
- 2 cups all-purpose flour
- ½ tsp. baking soda
- ¼ tsp. salt
- 8 tbsp. unsalted butter, at room temperature
- ½ cup vegetable oil
- ½ cup granulated sugar, plus extra for sugaring the tops
- ½ cup confectioners’ sugar
- 1 large egg
- 2 tsp. vanilla extract
- Zest of half a lemon
Make Ahead Chicken Taco Salad

Not only can all of the components of this dish be prepped a few days ahead of time, but it's good for you as well
- 1 head iceberg lettuce, shredded
- 4 chicken breasts, boneless, skinless
- 1 package taco seasoning
- 2 small, vine-ripened tomatoes
- 1 small can sliced black olives
- 1 small can chopped green chilies
- Shredded cheddar or Monterey Jack cheese
- French or Catalina salad dressing
- Fritos or edible taco salad shells
- Sour cream for garnish, optional
Citrus-Pomegranate Quinoa Salad

Whisk together dressing ingredients and set aside
- 1/2 cup freshly squeezed orange juice (about 1 medium orange)
- 1 1/2 tablespoons freshly squeezed lemon juice (about 1/2 medium juicy lemon)
- 1 1/2 tablespoons freshly squeezed lime juice (about 1/2 medium juicy lime)
- 2-3 teaspoons sugar, honey, agave, or Splenda (just add it to taste)
- 2 tablespoons pure olive oil
- 1/2 heaping teaspoon kosher salt
- A few cracks of freshly ground black pepper
- 1 clove minced garlic
Chicken and Broccoli Pasta with Pesto 1

1 Cook the penne in a large pot of water for 8-10 minutes until tender but firm
- 12 ounces penne pasta
- 2 tablespoons olive oil
- 1 lb skinless chicken breast half, cut into strips
- 1 red bell pepper, cut into strips
- 4 cups small broccoli florets
- 3/4 cup prepared basil pesto
- 1/3 cup freshly grated parmesan cheese
No-Fuss Sweet Potato Casserole

The Thanksgiving crowd anticipates sweet potatoes, and you won't disappoint with this casserole
- 2 beaten eggs
- 1/2 cup granulated sugar
- 1/4 cup butter, melted and cooled slightly
- 1 teaspoon vanilla
- 4 cups mashed, cooked sweet potatoes (about 3 pounds)
- 1/2 cup raisins
- 1/2 cup packed brown sugar
- 1/4 cup all-purpose flour
- 2 tablespoons cold butter

- 1 cup water chestnut
- 2/3 cup mushroom

- 4-5 leaves iceberg lettuce
- Special Sauce
- 1/4 cup sugar
- 1/2 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons ketchup
- 1 tablespoon lemon juice
- 1/8 teaspoon sesame oil
- 1 tablespoon hot mustard
- 2 teaspoons water
- 1-2 teaspoon garlic and red chile paste
- Stir Fry Sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon rice wine vinegar
