Christmas Crunch

This one is super easy and you can make it in a snap
- 1 24 oz. pkg. white bark coating (we use Kroger candy coating, but you can also use white chocolate)
- 1 box of corn chex
- 1 large bag of mini pretzels
- 1 large jar of salted dry roasted peanuts
- 1 package of plain M&Ms (you can use holiday varieties at any time of year
- to make it holiday themed – Christmas, Easter, Halloween, etc.)
Turkey Meatloaf with Quinoa

- 1 lb lean ground turkey
- 1/3 cup quinoa, dry
- 1 can (8oz) tomato sauce
- 1 tbsp olive oil
- 1 large egg
- 1 large onion, chopped
- salt and pepper to taste
Crock Pot Chicken Taco Meat 1

- 3 tablespoons taco seasoning, I use recipe # 4292
- 1 cup chicken broth
- 1 lb boneless skinless chicken breast
French Breakfast Puffs

Truth be told, there’s really nothing French about these
- 3 cups Flour
- 3 teaspoons Baking Powder
- 1 teaspoon Salt
- ½ teaspoons Ground Nutmeg
- 1 cup Sugar
- ⅔ cups Shortening (Crisco)
- 2 whole Eggs
- 1 cup Milk
- 1 -½ cup Sugar
- 3 teaspoons Cinnamon
- 2 sticks Butter
Quinoa Flautas/Taquitos

Preheat oven to 425. Spray saucepan with olive oil and add onion
- 1 cup quinoa, rinsed
- 1/2 cup onion
- Olive oil spray
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon dried red pepper
- 1/4 teaspoon Chipotle Chili Powder
- 1 tablespoon cider vinegar
- 3 tablespoons tomato paste
- 1 1/4 cups water
- 1 tablespoon olive oil
- 1/4 cup chipotle salsa
- 2 Tablespoons non-dairy cream cheese (optional)
- 1/4 cup chopped cilantro
- 1 cup cheddar or pepper jack cheese (I used Daiya)
- 6 8" tortillas (whole wheat or corn for a GF option)
Chicken Enchilada Casserole 1

1 Place Chicken in large saucepan and cover with water
- 3-4 chicken breasts (or 6 Halves) (or 1 8 oz serving crock pot chicken taco meat)
- 1 (10 ounce) can cream of mushroom soup
- 1 (10 ounce) can cream of chicken soup
- 1 (8 ounce) can diced green chilies (hot or mild, or a small can of each)
- 1 (10 ounce) package cheddar cheese, grated
- 1 small onion, diced
- oregano
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 12 corn tortillas
- 16 ounces sour cream
Chicken with Raspberry Sauce

Dip the chicken breast in the oil and then coat it with the breadcrumbs

- 1/2 Chicken Breast---pounded so it is thin
- Olive oil
- Italian bread crumbs
- Raspberry Fruit only jam (2 parts)
- Balsamic Vinegar (1 part)
