Sweet & Savory Spaghetti Squash

In 1 squash half, combine brown sugar 3 Tbsp
- 1 large (4 lb.) spaghetti squash, halved lengthwise and seeded
- 2 Tbsp. brown sugar
- 6 Tbsp. butter
- 1/4 tsp. ground cinnamon
- salt and pepper
- 1/4 cup grated parmesan cheese
- 2 cups vegetable broth
- 1 tsp. honey
- 1 tsp. Italian seasoning
Perfect Blueberry Syrup

1. In a pot, combine the blueberriew with 1 cup of the water
- 1 1/2 pounds blueberries (5 cups)
- 4 cups water
- 2 cups sugar
- six 1-inch strips of lemon zest removed with a vegetable peeler
- 3 Tablespoons fresh lemon juice
Marinara Sauce

Heat oil in a large heavy pot over medium heat
- 3 Tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 4 garlic cloves, thinly sliced
- 2 cans (28 oz. each) peeled whole tomatoes, pureed in a food processor
- 1/2 teaspoon crushed red pepper flakes
- coarse salt and freshly ground pepper
- 1/4 cup fresh basil, leaves torn
- 1 Tablespoon chopped fresh oregano
Grilled Steak with Greek Corn Salad

1. Preheat a grill to high
- 3 Tbsp extra-virgin olive oil
- 2 Tbsp red wine vinegar
- 2 Tbsp chopped fresh oregano and/or mint
- 1 tsp honey
- kosher salt and freshly ground pepper
- 1 English cucumber, peeled and chopped
- 1 pint grape or cherry tomatoes, halved
- 1 small red onion, diced
- 1/2 c crumbled feta cheese (about 4 oz)
- 2 ears of corn, shucked
- 1 1/4 lb cube steak
Corny Cajun Shrimp

1. In a medium saucepan, combine the corn, onion, celery, tomatoes, thyme and creole seasoning
- 1 bag (16 oz.) frozen corn kernels
- 1/2 large onion, coarsely chopped (1 cup)
- 2 ribs celery, coarsely chopped (1 cup)
- 1 can (14.5 oz. diced tomatoes with green chiles)
- 1 Tbsp. fresh thyme leaves
- 1 tsp. creole seasoning
- 8 oz. frozen peeled cooked shrimp
- salt and pepper
Carol's Potato Salad

Peel the potatoes and boil until a little soft (not mushy, but not hard)
- large Idaho potatoes (1 for every 2 people)

- 1 hard boiled egg (cold) for each potato
- 1 stalk of celery for every 2-3 potatoes
- 1/2 small Spanish onion for every 2-3 potatoes
