CHICKPEA CAULIFLOWER TACOS WITH LENTIL MUNG BEAN TORTILLAS

- For the Soft tacos:
- 1/2 cup pink/red/orange lentils
- 1/2 cup yellow mung beans (split mung bean)
- 1 cup water
- 1 1/4 tsp salt
- 1 clove of garlic
- 1/2 teaspoon cumin powder
- 1/2 a Serrano pepper (optional)
- For the Chickpea Cauliflower Filling:
- 2 teaspoons oil
- 1 can (15 oz) Chickpeas/garbanzo beans or 1.5 cups cooked chickpeas
- 1/2 red onion
- 1 loaded cup Cauliflower florets(sall and thin)
- 2 tsp taco seasoning
- 1/2 tsp paprika
- 1/2 tsp salt or to taste
- Toppings:
- Fresh salsa/pico de gallo
- Cashew sour cream
- Avocado or other toppings of choice
Grain Free Crackers

Preheat oven to 325. Position rack in the middle
- 1/2 cup Coconut flour
- 1/2 cup Almond flour
- 1/2 cup Arrowroot starch
- 1/4 cup Ground flax
- 1/2 cup Cashew milk or filtered water
- 1/2 teaspoon Sea salt
- 1/2 cup Coconut oil
- 1/2 teaspoon Raw honey or coconut sugar
Chia Milk

1. In a glass jar, soak nuts and seeds in 1 1/2 cup of water overnight
- 2 tbs chia seeds
- 1 tbs walnuts or pecans (pecans are sweeter)
- 1 tbs sesame tahini
- 1 tbs honey
- 6 dates
- Dash vanilla
Cauliflower "rice" Stir-Fry

Pulse cauliflower florets in a food processor until finely chopped
- 2 cups cauliflower florets
- 2 Tbsp coconut or extra-virgin olive oil, divided
- 1 sliced red onion, divided
- 4 minced cloves garlic, divided
- Coarse salt
- 1/4 cup Cleansing Broth
- 1 Tbsp minced fresh ginger
- 1 thinly sliced small red chile
- 2 cups broccoli florets
- 1 julienned large carrot
- 1/2 diced (stemmed, seeded) red bell pepper
- Juice of 1/2 lemon
- 2 Tbsp shelled pumpkin seeds
- 2 Tbsp fresh cilantro leaves
Secret Smoothie

Add all ingredients to a blender
- 1 very ripe banana
- 1 cup frozen strawberries
- 1 cup packed organic baby kale (or grown-up kale)
- 1 cup non-dairy milk (soy, rice, almond, or coconut)
Vegan Coleslaw with Bean Mayonnaise

Bean Mayo directions: Place all ingredients in a food processor and puree with the “S” blade until smooth

- 1/4 cup extra virgin olive oil
- 1/4 cup non-dairy milk
- 1.5-2.5 tbsp lemon juice *see note
- 1 tsp herbamare
- 1/2 tsp Dijon mustard
- 1/2 tsp palm sugar
- 1/2 tsp tapioca starch
- Pinch cayenne pepper

- 1 head green or red cabbage, finely shredded
- 2 carrots, finely shredded – yield 1/4 cup packed
- 1/2 red pepper, diced
- 1 full batch of bean mayo (recipe above)
- 1/4 cup yellow onion, finely chopped
- 4 tbsp white vinegar
- 2 tbsp gluten-free Dijon mustard
- 2 tsp celery seed
- 1 tsp Himalayan rock salt
- Fresh pepper to taste
Spinach Artichoke Soup

In a high speed blender or food processor, combine the ingredients for the cream and blend until smooth
- 1 can of great northern white beans, rinsed and drained
- 1 cup unsweetened almond milk
- 4 tablespoons freshly squeezed lemon juice
- 2 1/2 tablespoons nutritional yeast
- 1 1/2 teaspoons white miso
- 1/2 tsp mustard powder
- 1 teaspoon olive oil
- 2 shallots, chopped
- 1-2 medium-large cloves garlic, minced
- 2 cups canned or frozen (thawed) artichoke hearts
- 2 cups spinach leaves
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 3 cups vegetable broth
- 1 cups water
- salt and pepper to taste
French Dressing

Put all ingredients in a small blender and blend until smooth
- 1 squirt of mustard
- 1 Tablespoon tomato paste (organic)
- 1/3 cup olive oil
- 1/4 cup white wine vinegar
- 1 Tablespoon of honey (optional)
- 1/2 tsp onion powder or small chunk of fresh onion
