Grain Free Stuffing

Preheat oven to 375 degrees
- 2 large turnips (not sure how big they normally are, but mine weighed about 2 lbs each, so 4 lbs total)
- 3 large or 4 medium sweet potatoes
- 3 large onions
- 5 large ribs of celery (or about 1 medium sized head)
- 1 package of fresh button mushrooms
- 1 apple
- 1 pound of sage pork sausage (optional)
- 2-3 teaspoons or more garlic powder (to taste)
- 2-3 teaspoons sage powder or more (to taste)
- 1 About 1 teaspoon each of Rosemary, Thyme and Oregano
- 1 teaspoon Turmeric
- 1 teaspoon black pepper
- 2 teaspoons of sea salt or more (to taste)
- 1/2 cup of oil for cooking: tallow, lard, ghee, coconut oil, etc (just no vegetable oils)- I prefer tallow

Instructions Have all ingredients out to room temperature
- 2/3 cup coconut flour (2 3/4oz)
- 1/3 cup arrowroot starch (1 1/4oz)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/3 cup coconut sugar (or any sugar of your liking)
- 1 teaspoon vanilla extract (*we did 1/2 teaspoon vanilla bean powder)
- 1 teaspoon cardamom (optional, we just love the flavor)
- 2 whole eggs or 2 flax gels
- 1/3 cup chocolate chips
- 4 tablespoons coconut oil, liquid
- 4 tablespoons coconut butter, softened (or real butter or vegan butter)
- 3-4 tablespoons water

- 1 cup finely chopped garlic scapes (or 2/3 cup finely chopped chives, plus 2 to 3 cloves of finely chopped garlic)
- 1/3 cup olive oil
- 1/3 cup roasted hazelnuts
- kosher salt and freshly ground black pepper to taste
- 1/2 pound snap peas
- 1 cup peas
- 4 tablespoons finely grated parmesan
- 1/4 cup mint leaves
- 1 pound spaghetti
Hippie Loaf

Preheat oven to 350F. Grease a standard bread pan and set aside
- 2 tbsp tamari
- 15 ounces black beans, drained and rinsed
- 1 whole onion, diced
- 2 whole garlic cloves, minced
- 1 whole carrot, minced
- 2 whole celery stalks, minced
- 1 cup mushrooms, coarsely chopped
- 1 cup quinoa, cooked
- 1 tbsp italian seasoning
- 3 tbsp brown rice flour
- 2 tbsp ketchup
Chia Power Bars

1.Place all ingredients in a blender and blend until smooth
- 1/2 cup dried dates, soaked in 1 cup warm water until rehydrated, drained
- 1/2 cup dried cherries
- 1/4 cup cocoa powder
- 1/2 cup chia seeds
- 1/4 cup ground flax
- 1/4 cup sesame seeds
- Finely grated zest and juice of 1 small lemon
- Pinch of sea salt
- 2 tablespoons coconut oil
- 1/2 cup steel cut oats, soaked overnight in water, drained
Tortilla Wrap

Blend all the above ingredients in a food processor or mini-blender
- This is a great tasting tortilla wrap filling, that makes a mean tortilla. Here’s what you’ll need for the filling ingredients:
- 1 Sweet Red Bell Pepper, chopped
- 1/4 cup Walnuts
- 1/4 of a lemon, juiced
- 2 chives diced (green onion, or wild garlic work well too)
- Dash of Olive Oil to help blend
- Dash of cumin for taste
Salmon Arugula Salad

Fire up the grill and keep it at a medium-low heat
- Ingredients for the salad
- 1 large wild salmon fillet;
- 2 tbsp coconut oil;
- A few sprigs fresh thyme;
- 2 cloves garlic, minced;
- A few handfuls of fresh arugula;
- 2 to 3 artichoke hearts, chopped;
- 3/4 cup cherry tomatoes, halved;
- Sea salt and freshly ground black pepper to taste;
- Dressing
- 4 tbsp extra-virgin olive oil;
- 4 tbsp paleo mayonnaise;
- 2 tbsp lemon juice;
- 1 tbsp Dijon or homemade mustard;
- Sea salt and freshly ground black pepper to taste;
Almond Mayonnaise

Blend everything except olive oil Add olive oil while still blending and blend for about 1 min
- 1/2 cup soaked almonds soaked for four hours
- 3/4 cup distilled water
- the juice of 1 fresh lemon
- 3 dates pitted
- 1 tbsp agar agar to help to become mayo
- 2 tbsp of onion flakes
- 1/4 tbsp celtic salt
- blend for about 1 min
- add 1/2 cup of extra vergin olive oil
- if to thick you can add some water
Sardine, Avocado and Radish Salad with Upland Cress

- 1 to 2 tins, depending on how many you want on each salad of two layer brisling sardines in olive oil, drained
- 2 avocados, split, pit removed and sliced into rounds
- 4 large radishes, sliced thinly
- 1 tablespoon plus 1 teaspoon fresh chives, cut into batons
- 1 tablespoon flat leaf parsley
- 1 or 2 lemons
- extra virgin olive oil
- kosher salt and fresh ground pepper
- 1 bunch of upland or water cress
Rosemary Basil Sun Dried Tomatoes

Core and quarter tomatoes, if they are large cut them into 6th's or 8th's
- 15 firm ripe Roma tomatoes
- 2 tablespoons olive oil (I use extra virgin)
- 3 cloves garlic (smashed)
- 2 tablespoons fresh chopped basil
- 1 tablespoon dried rosemary
- 1 tablespoon kosher salt
