Lentil Soup with Coconut Milk

Add the rinsed lentils, broth, thyme and tumeric or curry powder to a large pot
- 1 1/2 cup lentils, rinsed (green suggested)
- 4 cups low sodium vegetable broth
- 1 1/2 tsp. tumeric OR curry powder
- 2 tsp. dried thyme or 1 Tbsp fresh thyme leaves
- 1 Tbsp. coconut oil
- 1 large yellow onion, diced
- 2 stalks lemongrass, outer layer removed, lower portion finely minced
- 1 tsp. sea salt, plus more to taste
- 1/2 tsp. cardamom
- 1/2 tsp. cinnamon pinch of red pepper flakes to taste
- pinch of fresh grated nutmeg
- 1 1/4 cup coconut milk (use full fat, just believe me)
- 3 Tbsp. lemon, lime or orange juice
- a few handfuls of swiss chard, spinach or kale
- 1 cup flake coconut, toasted (optional)
- chopped cilantro, for garnish (optional)
Frosted “Corn” Flakes Cereal

Preheat oven to 300 degrees F
- 1 lb unsweetened coconut flakes (8-9 cups)
- 1/2 cup water
- 1 tbsp plus 1 tsp pure vanilla extract
- 1 tbsp ground cinnamon
- 1/2-1 tsp fresh grated nutmeg
- 1/4 tsp Pure Kal Stevia or sweetener of choice (to taste)
Carrot and Zucchini "Spaghetti" with Spinach Pesto

Julienne the carrots and zucchinis into a large bowl
- 2 large carrots
- 2 large zucchinis
- 3 cups baby spinach
- 1/4 cup raw pumpkin seeds
- 3 cloves garlic (I used 4, it was too much)
- 3 tbsp olive oil
- Salt to taste
Sweet Potato Truffle Balls

Directions Combine all the ingredients except the shredded coconut, stirring well
- 1 cup Sweet Potato Purée.
- 3 tablespoons coconut oil, softened.
- 2 tablespoons coconut milk (or cream).
- 1 tablespoon coconut flour.
- 1 teaspoon granulated stevia, or 1-2 teaspoons rice malt syrup.
- pinch salt.
- handful shredded coconut, toasted if you like.
