- 2 hard-boiled large eggs
- 1/2 medium onion, finely chopped

- 1 garlic clove, finely chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 3/4 pound ground beef chuck
- 2 tablespoons raisins
- 1 1/2 tablespoons chopped pimiento-stuffed olives
- 1 (14-ounce) can whole tomatoes in juice, drained, reserving 2 tablespoons juice, and chopped
- 1 package frozen empanada pastry disks, thawed
- About 4 cups vegetable oil

Roasted Cauliflower with Cheese Sauce

Creamy Cabbage Soup

This is a creamy soup that has no cream in it
- For garnish:
- 1 tablespoon extra virgin olive oil
- 1 medium onion, chopped
- 1 russet potato, peeled and grated
- 3/4 pound cabbage (about 1/2 medium head), cored and shredded
- Salt to taste
- 5 cups water, chicken stock or vegetable stock
- 1 Parmesan rind
- Freshly ground pepper to taste
- 2 cups low-fat milk
- 1 cup grated Gruyere cheese
- 6 1/2 -inch thick slices of French or country bread, toasted and cut into small squares
- Minced fresh chives

- 1 tablespoon unsalted butter, plus 1/4 cup melted butter
- 2 medium shallots, thinly sliced

- 1 1/2 cups reserved stock from Poached Chicken
- 2 tablespoons all-purpose flour
- 4 medium carrots, cut on the diagonal into 1/4-inch-thick slices
- 3 medium celery stalks, cut on the diagonal into 1/4-inch-thick slices
- Poached Chicken
- 3 tablespoons coarsely chopped fresh flat-leaf parsley, plus about 1/2 cup leaves for crust and sprigs for garnish
